Every July our country celebrates freedom. On this Independence Day, I was reminded of Franklin D. Roosevelt’s “Four Freedoms” address to Congress during which he said, “The third is freedom from want – which, translated into world terms, means economic understandings which will secure to every nation a healthy peacetime life for its inhabitants - everywhere in the world.”

MANNA strives to provide this freedom locally through our home-delivered and nutrition-based meals that provide more than 800 clients a measure of independence as they struggle to regain their strength and health. All of us should recognize the role we play in providing an opportunity for so many ill people to remain in their homes, with dignity and a sense of autonomy...a basic freedom we should not take for granted.

All of us at MANNA appreciate your support in providing independence. We hope you have a great start to a healthy summer!

In addition to serving clients with HIV/AIDS, MANNA has recently expanded eligibility for home-delivered meals to include people undergoing treatments for cancer. In the Philadelphia area, there are no other programs offering direct nutritional support to individuals undergoing chemotherapy or radiation treatments. MANNA has since added two new diets: a low residue diet and a high-calorie, high-protein diet to address the specific nutritional needs of cancer clients. As part of the pilot program, MANNA added a third palliative diet to provide easily digestible comfort food for those in the end stages of life.

Executive Chef Keith Lucas and the MANNA kitchen staff and volunteers prepare as many as 2,000 meals a day that are delivered to 800 clients a week. The chefs have created new recipes, made with quality ingredients with nutritional values for which MANNA meals are known. These new savory entrées include: shrimp and scallops in a chipotle-cream sauce, citrus-marinated chicken, tilapia with lime juice and herbs, and chicken with Chinese vegetables in a Shanghai peanut sauce. Each oncology client receives a standard meal (including a protein entrée with a grain or starch and vegetable, a lunch sandwich or salad, and a hot or cold breakfast) along with the daily soup, such as curried carrot, mushroom barley, spinach, or chicken noodle. Each client also receives a can of Ensure, a nutritional supplement that provides additional calories needed during medical treatments. All meals can be modified to meet each client’s own specific nutritional needs.

Currently, MANNA serves 64 cancer clients; nearly half of them are receiving palliative diets. Several clients, after receiving meals for 3 months and completing their treatments, have stepped off the meal program and will continue to receive nutritional counseling from MANNA.
