Wine Terminology

There are lots of words used in this industry. Here are a few and their meanings:

- are found in the stems, skins and seeds of the grape. A natural preservative in wines, which affect taste, colour & mouthfeel of wine. Mostly associated with dry puckered feeling or "furriness" in the mouth.

Bottle Shock

- is the time it takes for a wine to settle down after bottling. Anywhere from weeks to months.

Ullage

- the gap of air between the wine and the top of the container it is in. Generally winemakers like to keep this to a minimum. They use nitrogen or carbon dioxide to eliminate any oxygen.

Angels' Share

- the portion of wine that is lost to evaporation during ageing in oak barrels. During maturation barrels get 'topped' to ensure they remain full.

Jasper - Couch Potato

Jasper the Dog

Jasper is looking too healthy - a little on the rotund side - so his diet is modified - much to his disgust.

Mind you, his night time escapades of locating dead, rotting roos is not helping his cause.

Jasper does not think on a cold, wet, winter night that his family should go out without him, and leave him outside.

This results in him deciding to go off exploring and see what wonderful gifts he can return with for us.

We are ahead - the gates get closed and he is confined to barracks!

Welcome to the June edition of BirdTalk.

No doubt like us, you are trying to keep warm this winter. So far we haven't had a lot of rain which has meant much colder weather. But the winter lake is filling and the ducks have moved in. The vines have been a little slow to shut down, but are finally showing some great autumn colours, and the leaves are starting to fall off.

Around the vineyard we have been busy with post harvest fertilising, weed management, and getting the ground between the vines ready for a cover crop to be sown. It also time to start thinking about the upcoming pruning, get out the electric secateurs, give them an overhaul and make sure they will be up to the job. We expect to commence the pruning in the second half of July. (Pippa needs her holiday first!)

Mark is very pleased with how the 2011 vintages are travelling. All the whites (Sauvignon Blanc, Arneis and Moscato) are finished and ready for bottling which will take place on Sunday 26th June, here onsite. So come Spring we will have some new fresh white wines for you to experience.The 2011 reds are now safely in barrels ageing away.

July will bring the school holidays, which those of you with children at school will be looking forward to. We are off with our children, Bailey & Gabrielle to Cairns during the second week, to enjoy some sunshine, golfing and the reef. Pippa lived up in Cairns in the late 80's, so will be interesting to revisit.

Our regular, Steve Shaw will be here at the Cellar Door to entertain you whilst we are away enjoying sunshine.

We hope you enjoy spending time with family & friends over these winter months - whether it be following the footy, on holiday or over a good meal.
