Bobolink Dairy is a small, grass-based dairy farm in Milford, NJ near the Delaware River in Hunterdon County. Committed to farming sustainably and humanely, the cows on the dairy farm live on the pasture, eating the diet that they evolved on: native pasture grasses. All of the cheeses are made from raw grass-fed milk and are aged for sixty days or longer. The cheeses are cave-ripened which develop a natural rind and profoundly complex flavor. No kidding, these cheeses are UNBELIEVABLE!
Each week, we will be sampling (and selling) these seasonal artisan cheeses with our delicious wine selections. Wine and cheese - I mean COME ON, how can it get any better than that?!
2009 Hippolyte Reverdy Sancerre, Sauvignon Blanc This is the pinnacle of Sauvignon Blanc. An amazing mash-up of super-bright citrus, fig, mint and basil with the tangiest, brisk streak of acidity. This is the laser sword of the Loire. This wine's a food lover, too. Domaine Hippolyte Reverdy doesn't produce a ton of this Sancerre, but what little they make is always astounding. We've carried this wine year after year, and it continues to be one of our favorites. Bottle: $28.99 - Case: $295.70 2005 Azelia Barolo, Piemonte, Nebbiolo 90 points, Wine Advocate, "The 2005 Barolo achieves superb balance in this vintage. The wine shows the freshness of the growing season, but also possesses striking density in its fruit that carries all the way through to the long finish. Sweet spices, menthol and red fruit are some of the nuances that can be found in this soft, beautiful wine." You won't be disappointed with this one! Bottle: $44.99 - Case: $458.90 2007 Downing Family Vineyards 'Fly by Night' Zinfandel, Napa Valley This unique Oakville zinfandel has developed a powerful structure that is sweet on the front palate and spicy on the back. Black currants, wild huckleberries, and a melting essence of dark chocolate emerge from this full-bodied wine that finishes with a note of vanilla and cracked pepper. This wine makes a great companion to almost any meal. The PERFECT wintertime red wine! Bottle: $19.99 - Case: $203.90
