Winter 2010 Issue: 11
Happy New Year!

Greetings!

Kelties Restaurant and Catering
As we put 2009 behind us and turn a new chapter for 2010 I think of all the magnificent things that happened, the near catastrophes, and the amount of food we cooked!!  God is so very good and has blessed me with a staff of great people, wonderful community to grow my business along with family, friends and neighbors who would do anything for you.

What are your thoughts on making New Years Resolutions?  I always see January 1st as a day of such clarity, and so determined to follow through on how I want to be a better person.  Of course it is also the first day I get off since Thanksgiving, so I love it.  This year I spent the day with my Mother, who I have promised to spend more time with.  She was the main reason for moving back to Indiana and I want to be a better daughter and mother.  I wish you willpower, and steadfastness while you reach for your goals and dreams this year.

Looking around, there are so many people to thank for our growth here in Westfield.  There are so many businesses that have helped us maintain our quality and helped get our name out that I would like to take this time to name a few (I would like to list them all but we would be here for a long time.... Stay tuned for more great people in coming newsletters).

Wood Wind Golf Club:   We became a partner with Wood Wind Golf Club in September of 2008, owned by The Estridge Companies and have enjoyed providing foodservice to all the many guests and golfers throughout the year.  In addition, we have been able to host, as the exclusive caterer; weddings, golf outings and many other special events in the spacious pavilion which seats up to 195 guests.  The general manager Doc O'Neal and myself have worked together over the past ten years from his days at The Preserve/Bridgewater Club (by the way...The Wood Wind Golf Academy is now open and a great place to continue your golf throughout the winter).  www.woodwindgolf.com

Delta Faucet:  We started catering for Delta a little here and there three years ago and now we are one of their exclusive caterers.  Jon Dartt a Westfield resident and Vice President of Trade Sales recommended us and the relationship has been a great one.  Thank you Jon (P.S. Buy Delta Faucet Products). www.deltafaucet.com

The Fern of Westfield: A new event venue in downtown Westfield opened its doors in 2009, perfect for events from 5-75.  Jane and Pat Callahan purchased the home and brought it from dull to dynamic!  Jane and Pat did most of the work and believe me it is impressive.  Warm, inviting, private and award winning are a few of the words that pop in my head.  Jane asked us to be her exclusive caterer and of course we said "Yes"  The quality of people in Westfield never ceases to amaze me and I would put Jane and Pat as the cream of the crop  (P.S. They are adding an outdoor garden this year).  www.thefernofwestfield.com

Indulge me one more..if you would

Avellana Web Design Group: Tony Avellana and I have been attending Saint Maria Goretti parish together since I moved to Westfield, WOW over 10 years now.  His wife Julie worked at the restaurant for over 4 years as a server and then as our catering manager.  Two of his sons Peter and Jacob work with us on many catering events as well as help us out in the kitchen, so for me Avellana Web Design Group is part of my family and not just a business.  We had a good website before, but when Tony took it over it was like hiring a boss for myself. "When are you going to get me the content Keltie?" "Let's plan on meeting here to go over your marketing strategy" I am not easy to pin down!  But what I can tell you, is that Tony has brought creativity, focus and amazing marketing experience to us and our brand.  Tony is an expert in web design and I am thrilled to be working with him he has helped in every aspect of our marketing and continues to drive business our way (P.S. He is also an amazing recording artist as well... you should hear this guy sing).

Kelties Etiquette Tips
Etiquette Tip of the Month
Thank you letters.  Remember them,,,,they are those cute little cards that sit on your desk for weeks on end, till you finally say why send it now it is too late.  I encourage you to write a minimum of two thank you letters a week.  Not an e-mail, not a text message, but a genuine old fashion hand written thank you.  The etiquette rule says that a proper thank you is sent within 24 to 72 hours.  That is 1-3 days.  Timing is everything, but say you do forget to send one in a timely manner.  Make no excuses when sending it, but just remind them again how kind it was that they took you to dinner, purchased a gift at your store or were kind to help with your children while you visited your grandmother.  Lets bring this old fashion art back...

Baking Tip of the Month

With a new year starting, here are a few ideas to make sweets with a little less sugar.

  • Add dried fruit purée to replace some of the sugar and fat in soft, chewy cookies. Boil pitted dried plums or dates until soft and purée until smooth in a food processor or blender.

  • Experiment with reducing the amount of sugar by one quarter to one third in most drop cookie recipes.

  • Slice bar cookies into bite-sized portions.

  • Take advantage of the natural sweetness of dried chopped fruit instead of the candied variety to add to your favorite baked goods.

  • Portion smaller amounts of cookie dough (for instance, 1 teaspoon instead of 1 tablespoon) for mini versions of your favorite treats. Bake at a lower temperature for a shorter period of time.

Award Winning Beers
What's Happening at the Bar
Many people enjoy a glass a beer. Some do not realize that the pairing of a good beer with fabulous food is just as important as pairing a good wine. Here at Kelties we have a great selection of local midwest breweries to provide our guests with outstanding award winning beers.

Beers on Tap Now

Domaine Dupage
- French County Style Ale
A rural, northern France, amber colored ale. This well balanced beer is full and sweet up front with caramel, toasty, and fruity characters. The finish has a gentle floral and spicy hop balance that cleanses the palate.

Schlafly -  Oatmeal Stout. This rich, full-bodied stout has sweetness from caramel malt, bitterness from roasted barley and smoothness from flaked oats.
