Greetings!

Kelties Restaurant and Catering Is that a cry for help.....quite the contrary here at Kelties this month. Although it may appear that way with my tardiness
 
We have been blessed by so many things .... One of them is my great friend Pam Kijauskas.  Pam, who not knowing what she was getting herself into took the job to help me run the restaurant  six years ago!!.. She has built our clientele, trained our staff and carried out our mission to exceed guests expectations.  She has created special events and gained the hearts of many.  She has been there for me time and time again, and I can honestly say we would not be where we are today with out her.   It is with a sad heart that I say good bye to her.  Pam is moving back to Cleveland where she has longed to be close to her family. Stop by and give her a fare well hug before June 15th.
 
Another blessing joining our team is Jeremy Miner.  Jeremy is going to be taking Pams position as Restaurant Manager.  For a young man he has a world of knowledge.  He is studying to be one of the youngest master sommelier. So come taste some new wines we now have on our shelves.  He grew up in Hamilton Indiana, and now lives in Noblesville with his wife Renee.  He has worked and studied most of his young life in Chicago in a variety of upscale restaurants.. some include Shulas in downtown Chicago, Philander's of Oak Park.  Come by and say hi to Jeremy.

Wine Tip of the Month

Although summertime usually evokes the customary pairing of white wines with your meal, it does not preclude the substitution of a red wine now and then to compliment your dining experience.  Red wines can satisfy the palate by themselves or combine with certain summer foods including your friendly neighborhood barbecue to enhance your meal.  The question is, with so many red wines available, where do you begin?!

A good place to start is in Beaujolais, France. This appellation is located in southern Burgundy and the wine is produced from the Gamay grape. The more common version is the Beaujolais Noveau, which is meant to be drunk within a year or two of being bottled. At Kelties we are featuring a Beaujolais-Villages from Joseph Drouhin, which is a step up in quality from the Noveau. It is light and refreshing wine with cherry and raspberry flavours; very light tannin; good acidity, and a little truffle.

This wine pairs perfectly with the cuisine at Kelties and provides a great way to welcome the summer!

Tips for Frosting a Cake
With baking camp around the corner, I wanted to get a head start on things.

This is always fun when decorating with children.
 
Decorating cookies and cakes with colored sugar and coconut.
 
You will need 5 or 6 clean jars or plastic containers.
Place approximately ½ C. sugar in each of 3 containers and ½ C. coconut in each of the remaining containers.
Add 2 -3 drops food coloring (color of your choice) to each container and shake vigorously.
 
Enjoy decorating with your favorite colored sugar and coconut.
