Hurricane Irene: I thought we'd be busy at Country Cupboards while offering a free breakfast to local contractors. But when Bill, the owner, opened it up to hurricane beleaguered residents, then I KNEW WE'D BE BUSY. We were! New Season of Cooking Classes Kicks off NEXT Tuesday Sept 20!!!
A wide variety of topics with Jessica Bard, Maureen Luchejko and introducing Chef Mullooly!   

Classes are sponsored by Warren Kitchen & Cutlery. Join us in welcoming Chef Rob Mullooly. He is a chef instructor at the Culinary Institute of America and wants to be able to teach you a few culinary things that come in really handy. These 2-hour classes are a great way to get professional help! Also, Warren Kitchen & Cutlery's Jessica Bard will continue to teach a few of her favorite things. Joining us again, food stylist, Maureen Luchejko.

Preserving the Season - Canning & Pickling 101 ~ Demonstration Class

NOTE: This is not a two-part class. This class is popular so we are running it a 2nd time!

 

Chef Mullooly will teach the techniques of preservation by the water canning method. Learn how to make a wild berry jam, seasonal fruit chutney and hot-packed pickled vegetables that can be easily jarred in a short amount of time! Learn the importance of pH balance, and proper temperatures and cooking times when canning produce.

Roll Your Own Sushi  

~ Hands-on Class  

Warren Kitchen and Cutlery's veteran cooking teacher, Jessica Bard, will teach you how easy it is roll your own sushi. Learn how to properly make the sushi rice, toast the nori and roll it up with your favorite fixin's - great for Vegetarians! Other recipes include Ponzu sauce for dipping and the classic Carrot-Miso dressing to drizzle over your cold iceberg lettuce salad!  The photos of Steven and Linda are from our very first Sushi class in January 2006.

Cozy Bistro Dinner ~ Demonstration Class

Do you want to know how to add flair and pizzazz to your basic roast chicken dinner? If so, then come watch and taste Maureen's complete cozy bistro-style meal. Learn to make the Perfect Roast Chicken, Haricots Verts with Lemon-Brown Butter (green beans!), and Pommes Anna (sliced potatoes) and the tasty and easy dessert - Classic Chocolate Mousse (Let me repeat- chocolate!!!)  Photo is of Maureen teaching a version of this class in May 2008!

Walk in to class and start shaping your own mini apple pie with master pie-maker, Jessica Bard. While your pie is baking, Jessica will teach you how to make the best all-butter pie crust! You can take that home and make your own full-sized to show off to your friends and family!

The Ultimate French Dessert, Dacquoise ~ Demonstration Class

Crisp hazelnut meringue layers sandwiched between rich mocha buttercream, ganache and coated with toasted almonds. This spectacular French dessert is truly impressive. It takes a little patience, but it is very easy to make. In this class, Maureen will show you how to make perfect meringue cake layers, velvety ganache, and a delicious mocha buttercream. This recipe is a must have for anyone who loves to bake!

Seasonal Soups: Cream-Style! Bisques! Hearty Veg! ~ Demonstration Class

In this class, Chef Mullooly will concentrate on three styles of soup; cream soups, bisques and hearty vegetable soups. Students will be shown practical methods of preparing these style soups and tasty garnishes. Learn how to make a "stock" as a good base is the key to a great soup. Students will also be shown how to properly thicken soups with starches and vegetables.

How to Roast a Moist Turkey and Other T-Day Tips ~ Demonstration Class

Walk in to class and smell the turkey roasting. Jessica Bard will pull it out of the oven and show you how to make a great gravy, how to deal with stuffing, and the best carving techniques. While you are eating the bounty, Jessica will show you she brined the turkey, trussed it, and got it into the oven on time! She'll share the recipe for fantastic seasoned bread stuffing and talk about ways to make the Vegetarians at the table happy.

5 Fabulous Finger Foods for Holiday Entertaining ~ Hands-on Class

The season to entertain is here! Don't call the caterer- just come cook with Maureen! Learn to make these 5 fabulous finger foods (you'll want to serve alongside your favorite holiday cocktails!) Panko-Crusted Mini Crab Cakes with Wasabi Aioli, Chopped Liver Crostini with Red Onion Jam, Caesar Salad Endive Spears, Rosemary-Parmesan Shortbread, and Blue Cheese Popovers Can you say, "Yum"?!

Classic Sauces: From Red Wine and delicate Lemon-Butter to good 'ole Pan Gravy! 

~ Demonstration Class

Join Chef Mullooly as he teaches you how to properly make a variety of sauces; pan gravy for roasted chicken or turkey, red wine sauce for roast beef, and a lemon butter sauce for fish. Understand how to thicken a sauce properly and how to hold the sauce hot while you entertain guests- a great tip for the holidays!

Make Your Own Buche de Noel (Yule Log!) ~ Hands-on Class

Jessica Bard will guide you through the process of making this holiday classic cake - shaped like a log - complete with little mushrooms made from meringue! Making a chocolate sponge cake is easy. Making a yummy filling is easy. Making icing that will look like bark is easy. Putting it all together takes a little focus but you'll get the hang of it.
