Warren Kitchen & Cutlery is proud to continue our spring cooking classes with local, award-winning chef and C.I.A. graduateChef Wes Dier Chef Wes Dier (formally of 40 West restaurant in Rhinebeck). Chef Wes offers the restaurant chef's perspective but with the techniques to prepare foods at home. Sign up soon, classes sell out quickly!

Thursday, May 14  ~ Oysters Mignonette, Tuna Tartare, and Beef Carpaccio: 
Elegant Raw Food Preparations
:This class is a little pricey but that's because the ingredients are fancy and of the finest quality- Chef Wes will let you in on some restaurant secrets so you can make these tantalizing menu items at home.
6:30 - 8:30 PM  ~  Hands-on Class  ~  $60 per person
Learn how to safely handle an oyster knife and the proper way to open oysters. Hone your presentation skills by presenting Raw Oysters with a Zesty Mignonette Sauce. Be the star at your next dinner party with a refreshing, vibrant Tuna Tartare or the delicious Beef Carpaccio with Tobacco Onions and Chili Aioli.  Let's recap: raw oysters, tuna tartare, beef carpaccio?! -- the extra cost is worth it !!
 
Thursday, May 28   ~  Chicken & Trout: Poultry & Whole Fish Butchering
6:30 - 8:30 PM  ~  Hands-on Class  ~  $40 per person
Learn the economic values of butchering your own meat.  De-bone a whole chicken and save a bundle at the market.  Fillet a whole trout and say good-bye to those pesky little bones.  Chef Wes will cook-up the trout and show you how easy, quick, and tasty it can be. Take home your chicken and recipes for all!

Slow Food, and Big Puppets in Italy?

Interested in the Slow Food Movement? This June you could be in the Italian region where it all began in 1986. This workshop of creating BIG Puppets for a community procession is catered by local chefs with local foods from the Piedmont region of Italy.

For the the past 8 years  Hudson Valley artists and  Red Hook residents Sophia Michahelles and Alex Kahn have been bringing people to the mountains of Italy to learn Giant Puppet Making skills & Processional Art. Morinesio Puppetry

Join them for their 8th annual Pageant Puppetry Workshop in the Italian Alps from June 20 to 28. The Midsummer Pageant has become an eagerly awaited ritual among the villagers of Morinesio, whose folktales and personal histories are brought to life as new puppets each year.  Puppet Festival


The weeklong workshop features gourmet meals of locally-grown food, side trips to a local cheese farm and historic sites, and even an evening of traditional Occitan step-dance lessons in preparation for the final Festa.
