THE STORY OF THE OVEN:This magnificent oven was completed late this summer by our good friend, and mason, Matt Eramo with a little help from Eramo Masonry, in Granville VT, owned by Matt's father Mike. My brother Mark, chef PJ, Doon and myself helped with rock shlepping and research. But it was Matt who built it stone by stone, day after day, after many a wakeful night, with inspiration and big heart. We are thrilled with what Matt has created, and for the inspiration we too feel for its abundant possibilities: hence the Pop-Up Eatery! Our NECI trained chef PJ Lauriello, who is new to Rochester this summer, is firing up this oven at every opportunity. For those of you who didn't get to sample PJ's fabulous pizza during our Bike Shop celebration, here's your chance! Art, food, and good community. What else is there? Happy fall! ~ Anni
