Two cousins. Different generations. Elder passes along his SmokinTex experience and smokin knowledge to the younger. Now both share a love of smokin amazing food in their SmokinTex smokers.
Jeff, the owner of a Pro Energy Consultants franchise, and his 12-year-old cousin, Grant, who live in Evansville, Indiana, got together to smoke Easter dinner for their family. Grant smoked ribs in his SmokinTex Model 1100
and Jeff smoked ribs in his Model 1400.
Jeff has passed his love of cooking/smokin to Grant and when asked how Grant became interested in cooking/smokin Jeff said, "I always bring some sort of meat to family gatherings and Grant, who weighs all of 85 lbs, would always eat the most. I even gave him bags of pulled pork for Christmas one year. He loved it, walked around all afternoon eating it out of the bag."
Jeff says his biggest hit from his smoker is "w
hole chicken, pulled pork, ribs, brisket, catfish, pork tenderloin, pork chops, chicken wings....depends who you ask. With the SmokinTex
it's all good! I don't concentrate on anything, it's more fun to experiment and see what happens. I'm going to make some smoked bacon from the pork belly soon."
Grant likes soccer, girls, video games & Jeff's secret BBQ sauce (which Jeff won't divulge to him or us). Jeff is involved with the West Side Nut Club, a local civic group that puts on the WSNC Fall Festival and raises hundreds of thousands of dollars for schools and charities every year.
Grant is one lucky 6th grader to learn from you, Jeff.
"I'm sure by the time he's ready for college he'll have friends fighting to be his roommate with his SmokinTex," Jeff said.

Zip's Smoked Steak
1-1/2" thick Sirloin
2" Fillet (or bigger)
Seasoned to taste or Zip's Steak Rub
Add 2 oz. Hickory Wood to SmokinTex
Place steaks in smoker @ 225 degrees and smoke for 30 to 45 minutes depending on thickness and desired doneness of steak.
Once steak is in the smoker fire up the grill, either gas or charcoal and get it hot. I use a charcoal grill and want the coals at there hottest when I pull the steak from smoker.
Remove steak from SmokinTex and lightly reapply seasoning to taste.
Place steak over direct heat to sear the meat to your desired doneness. 2 minutes per side for medium rare.
No steak knife needed, only a fork.
Zip's Steak Rub
- 2 T. Sugar
- 2 T. Onion Powder
- 4 T. Seasoned Salt
- 5 T. Garlic Pepper Seasoning
- 2 T. Paprika
- 1 t. Cayenne
- 1/2 t. Allspice
- 2 T. Ground Coriander
Mix together and apply heavily to steak.
