Janet holding fresh picked raspberrries up before colorful flowering bushesHi, I am digesting our vacation. I was foot-loose and fancy free for three weeks in Europe.  Summer can be a time of rejuvenation, bonding with people you love, catching up on needed rest; gaining new perspectives.
 
Afoot and light-hearted I take to the open road.

I did some hiking, reading, filming, and writing thoughts for upcoming speeches. Mostly, my husband Jim and I were grateful to simply enjoy our friends in the country, sometimes working in the gardens (here I picked a bowl full of raspberries), then enjoying the summer's crop of fresh food.  Enjoy your leisure and nature's bounty.

Halve the red peppers, remove the seeds, but keep the stalk so the pepper retains its structure.
 
Add garlic, tomatores and olive oil.
 
Bake at 320 degrees F (200 centigrade) for 30-45 minutes.
 
Voila!  Fresh from the garden of Katherine and Richard Heery in their home in the French Jura mountains.

DESSERT: DARK CHOCOLATE
 
A French woman told me she ends every meal with a "taste" of sweet.
At lunch an espresso coffee, after dinner a bit of dark chocolate.  After filling up with fresh vegetables and whole grains, she doesn't want a lot, but a little chocolate actually is good for you too.
 
According to Joshua Needleman, graduate of the Culinary Institute of America, who worked at the Maison de Chocolat in NYC and Paris and now owns the Chocolate Springs Cafe, there are many benefits of chocolate that is 65 to 70% cocoa:
 
 
BENEFITS OF DARK CHOCOLATE
 
 
Larger quantities of anti-oxidants (vitamins) - 5 X the amount contained in blueberries, and 10 X the amount in oranges. (Antioxidants fight free radicals caused by oxygen, which may lead to cancer)
 
According to a study printed in the Journal of Medicine in 2004, dark chocolate 
  • lowers LDL cholesterol
  • lowers blood pressure
  • prevents blood clots
  • works against cancer

Janet, you do have a strong influence on me.  From the questionnaire I understand that there is certain food that I have not eaten enough of so far and I have begun to change that.... The last days we had dark/green vegetables and beans (!) in the wok together with quinoa (even found that in a local supermarket, hurray!!!) and yoghurt dipping and it was SUPERB!!! I feel so motivated and hope to continue for some time (as long as possible) - in case my motivation drops.
