International Women's Day Celebrating 100 Years

With more than 278 events happening in more than 48 countries, women around the world are stepping out to celebrate a century of inspirational women through the past, present and future.

 

This year's theme is: Strong Leadership, Strong Home, Strong World Equality

 

Join me on the Bridge is one global campaign to join together on a bridge near you, and join in the global roar to say no to war, and yes to peace and hope. 

 

Women around the world will literally be standing on bridges whether 2 or 200,000, to join together holding up banners, making a public statement that 'Stronger Women Build Bridges of Peace' and to support women in war-torn areas.  To learn more visit www.womenforwomen.org/bridge.

 

But if you do not have time to make your way to a bridge to celebrate and show your support why not send some love and encouragement to women in your life you revere including your family, neighbours, friends and colleagues. 

 

Take a minute to send an email or a hand-written note to the women you love and tell them so.  Or perhaps pick up the phone and call a friend you haven't heard from in a while.

 

While you're taking a moment to tell the women you admire how you feel, don't forget to be kind to yourself.  Treat yourself as well as you treat your best friend, your daughter, sister and mother and give yourself grace for a day!

 

Do not consider your flaws or deficits today but enter into a place of gratitude.  Leave the dishes in the sink or scoot out from work a little early.  Pamper yourself by going for a walk, alone if you prefer, or sit quietly in your room to mediate. Dance to loud music, sing at the top of your lungs or eat a piece of that double chocolate fudge cake!  Book that trip you've been talking about for years or indulge in a dinner out with a loved one. 

 

This year celebrate International Women's Day in the way that moves you, and along the way, remember to be as kind to yourself as you are to the women you love.

A Taste for Travel

 Recipe - Tablet from Scotland

Each month you can look forward to a delicious recipe derived from one of our featured destinations. Entice your taste buds this month with a Scottish favourite - Tablet

  

Tablet is a traditional Scottish sweet confection which, if you like sugary things, is irresistable! You can add some flavouring from essence/extract as well, if you wish.

 

Ingredients (for 4 pounds/1.8kg tablet): 
Butter or margarine - half pound (225g) 
Sweetened condensed milk - one pound (450g)    
Castor sugar - 4 pounds (1.8kg) 
Water - 1 pint (half litre)

 

 

Method 
Using a non-stick pan, put the water on a low heat and melt in the butter. Add the sugar and bring to the boil. It is important to keep stirring all the time. Once it is boiling, stir in the condensed milk and simmer for 20 minutes. Again, keep stirring to avoid it sticking/burning. Take off the heat and beat vigorously for five minutes, adding the flavouring of your choice. Pour into a rectangular greased tin and once it is partly cooled, cut into bars (roughly 5 inches long by 1/2 inches wide). Once the tablet is cold, wrap the bars in waxed paper and store in an airtight jar or tin.

 

Now, close your eyes and take a bite.  Allow your senses to transport you to Scotland's highland region.  Imagine yourself amid mountain terrain, rolling hills made for hiking, impressive, picturesque castles, and splendid creatures including black faced sheep and highland cows.  Look out across the deep cerulean Atlantic Ocean to the west and the North Sea to the east while you savour your favourite Brodies' tea.  Magnificent!

 

For many people spring and early summer is the best time to visit the Highlands - clear, fresh spring air, vivid colours that accompany the new growth of trees and flowers, plenty of wildlife and lengthening days it really is an inspiring time to visit.
