I was in a Wegmans in Western New York last weekend (gotta love Wegmans) .. and while I was waiting at the checkout, the woman behind me gave me the most amazing compliment. Turns out she was a doctor .. and she was marvelling at all the whole, natural foods I was buying. She said it made her feel good to see a family eating such healthy foods..and that my kids were very lucky. (weep, weep). After I swam in the warm enjoyment of her compliment for a bit, I went about my day feeling good about the energy and effort I put into feeding my family.
But .. even I have days.. when all #&!@(#&(@@ breaks loose and I just cannot get it together to make the nutritious, homemade, piping hot meal that would be "ideal".
The key is to not throw in the towel and resort to McDonalds! You can still make some "better than bad choices" even when you are rushed. It is possible to throw together a healthy enough meal in less time than it takes to go through the drive through! As a self confessed Soccer Mom.. I have done it!
Planning ahead and having some stand bys on hand can really help. Here are a few that I use!

Bearitos Taco Shells
These taco shells do not contain the @##@& that most other brands do and yet they still hold up and taste great. They make a quick lunch or dinner - just stuff with veggies, salsa and cheese (if you do dairy), refried beans or leftover meat etc.
Amy's Refried Beans 
Right next to my taco shells are a few cans of Amy's Refried Beans. You can use these for tacos or just warm and serve over rice with a side salad or veggie. Good source of protein (just keep an eye on your overall sodium intake when you eat these). Our 17 year old eats a whole can - as a snack! Better than cookies!
Food For Life Brown Rice Tortillas
My personal favorite. These tortillas are Dairy Free, Wheat Free, Soy Free, Gluten Free, Kosher, Yeast Free and Vegan! I use these to make a quick but healthy lunch or dinner. I warm the tortilla in a pan with some olive oil, layer in previously cooked veggies, grains, hummus, beans, leftover chicken, high quality lunch meats or whatever I have. These don't roll well but they make great half moon sandwiches!
Tinkyada Rice Pasta 
I can still make American Chop Suey for the die hard fan in our house (my husband) thanks to Tinyada. This pasta cooks quickly and is a great alternative to wheat pasta. When you aren't in a rush, try the Lasagna - no one can tell the difference with that one!
