We are excited to introduce our new Coho Blend coffee. It's made with high-quality green beans purchased from small, family-owned farms in Sumatra and New Guinea. Steve at our local San Juan Coffee Roasting Company roasts in small batches, carefully gauging the roast between Medium and Espresso - just enough to give a hint of dark roast flavor, while still allowing the bright flavor profile of the high quality beans to shine through. It has been a particularly busy summer, as Coho's popularity has increased and more visitors are coming to the islands. October is one of our favorite months; the weather is usually gorgeous, and the number of island visitors is just a bit more manageable. October also brings "foodies," as we celebrate the bounty of the islands with our annual "Savor the San Juans - A Medley of Food, Art & Culture." This is the 3rd annual, month-long movable feast for the senses in the San Juan Islands. Throughout the month, there are autumn festivals, farm tours, art gallery happenings, theatre performances and more. Coho is participating with our special dinners and new fall menu. We are particularly excited about the abundance of wild mushrooms - Chanterelle's, Lobster & Porcini that Chef Ali prepares in a delectable saute with a bit of sherry and cream. We are featuring local Island producers Jones Family Farms; we buy their Pork that we smoke and braise, served with house made gnocchi; we prepare their Beef Tenderloin with Demi Glace and Blue Moon Farms Potatoes and a Hand-made Pasta with a Bolognese using Island Meats. As always, there are lots of fish and our daily specials. Our first-ever beer dinner is this coming Friday - a collaboration with Stan Reitan, from King's Market. We've included some thoughts about Belgian-style beers and food pairings in this issue.

Planning a Beer Dinner When Coho plans a special dinner, we choose a theme - either a country, a type of wine or beer, a wine maker or brew master. For this event, we wanted to collaborate with Stan Reitan, King's Market Beverage Specialist. Since Stan's Thursday night tastings primarily focus on wine, Stan suggested a beer dinner - specifically a Belgian-style beer dinner. So Coho's first ever beer dinner, might even be San Juan Island's first beer dinner, was born.
Trying to define "Belgian beers" is a like trying to define "American music - jazz, country, rock 'n roll." Belgium is renowned for producing some of the world's best beers. Stan will lead us through Belgium's distinctive styles and brewing techniques. We'll try six outstanding beers during the evening that will help us understand this style of beer making. Suffice it to say that Belgian Beers refer to those that are hand crafted and made of the highest quality. There are many styles of beers that fall under this name:
Trappist or Abbey - named where they are brewed;
Witbier/Biere Blanche - made from barley to which spices or flavoring are added;
Lambic -crafted with a natural air-borne yeast and fermented in wooden casks;
Gueuze - a particular type of lambic that undergoes a secondary fermentation similar to champagne;
Kriek Lambics - a type of lambic flavored with cherries, raspberries or candy sugar;
Lager/Pils - bottom fermented beer - the yeast remains at the bottom of the brew; and
Christmas Beers - produced for the holidays.
Stan picked out 6 of his favorite Belgian-style beers. Last week, we got together for a tasting and discussed the flavor profiles of each. Beer has a broad range of flavors, aromas and textures which match nearly any kind of food, from handmade sausages to the most luxurious gourmet dishes. So how do we go about pairing food with beer? The principles are similar to those we use with wine. Many of us already have our favorite beer pairing - a juicy bratwurst sandwich and dark porter, or a burger with fries and pale ale.
Chef Alphonsine Haslet-Phillips will take all of our tasting notes and work her magic to create a sensational menu for the evening.

Dinner Theater: Lip-smacking vittles, belly full of laughs, hair-raising chills, evening full of fun - get it all with the Coho Restaurant/San Juan Community Theater and the upcoming production - I'll Be Back Before Midnight.
Enjoy a 3-course meal, including a glass of wine, then head to the Theatre for a play that Kansas City Star describes as "fresh, dark, and horrifyingly twisted. Scream, laugh, scream again and hang on to your seats!"

"I'll Be Back Before Midnight" Will Have You Grinning Murderously | October Beer Dinner:
Pairing food with wine is sometimes more art than science. But what about Beer pairing? Join Coho Restaurant and Beverage Specialist Stan Reitan from Kings Market as we explore the marriage of food and beer. Coho's Chef Alphonsine Haslet-Phillips will prepare a 5 course dinner using local ingredients paired with specialized micro beers and Belgian style beers. October 1st, 6 p.m. $60++. Book early - this one's going to be a sell-out! For those needed a room, book at Tucker House Inn for $99/night; you can leave the car parked and walk a block to the restaurant.
Fall Foraging in Friday Harbor: Discover San Juan Island's wild food scene with a Fall Foraging Fiesta. This will be an action-packed, fun-filled weekend learning about the Islands, and the sustainably-farmed products available. Friday night we'll enjoy a presentation from one of the Island's most passionate foragers. She forages on a macro level, looking for new producers of sustainable ingredients for the Island's co-op and area restaurants. On Saturday, we'll forage on the micro-level with Ryan Browne. We'll tromp trails and fields gathering wild mushrooms and greens; glean fruit from trees and vines; harvest mussels and clams; collect eggs; visit farms for milk and meat; help with the wine grape harvest; stop at farms producing honey, goat cheese, cider and more. We'll break midway through and savor lunch at one of our favorite picnic spots. Then we'll head back and cozy around the fire to enjoy some wine & hors d'oeuvres, where our chef will help us cook up our bounty for dinner.
On Sunday we will do a blind taste test of common everyday ingredients including salt, olive oil and chocolate. Package price of $149 includes presentation on Friday night, transportation and admission to farms on Saturday, dinner and hors d' oeuvres and tasting on Sunday.
