Wolftrap Red Blend 2008 - Franschoek This wine is a French style blend. The viognier provides a perfume profile to the wine. Bold mulberry-raspberry fruit flavors with bacon fat, espresso and cocoa lead to a long finish. (68% Syrah, 30% Mourvedre, 2% Viognier) Rustenberg John X Merriman 2005 - Stellenbosch
Rustenberg has been making wine since 1682. A Bourdeaux-style blend with nice depth and spicy finish. (Merlot 46%, Cabernet Sauvignon 36%, Cabernet Franc 9%, Petit Verdot 9%) Neil Ellis Pinotage 2007 - Stellenbosch Pinotage is South Africa's signature varietal. This wine is ripe, with solid black currant, fig and plum sauce notes backed by a healthy dose of roasted vanilla, which frames the fruit-driven finish. Pair with lamb.

Greetings!
Greetings from Friday Harbor!
Coho has had the pleasure of hosting several journalists this spring for stories on the 'farm to table connection'. After our conversation, they were able to write about the 'farm to table to farm connection'. We are excited about our recycling project with Sweet Earth Farms. Sweet Earth Farms provides us with duck eggs, salad greens, rhubarb and summer peppers and several 5 gallon orange buckets. Throughout the week, we fill the buckets with vegetable peels, egg shells and left over bread. Sweet Earth uses this for compost and feed for their chickens and pigs. Between our regular comingled recycling and our new compost project, we have reduced our waste considerably.
This month marked the end of our power wine tasting before the summer season begins. We had the pleasure of tasting the wines of two winemakers - Erik Manz from Mountain Dome in Spokane and Scott Shull from Raptor Ridge in the Willamette Valley.
Erik and his family have been making sparkling wines in the traditional Méthode Champenoise since 1984. On a picture perfect San Juan Island Day, we sat outside on the patio with Erik tasting his 4 well crafted wines. His non-Vintage Brut is 2/3 Pinot Noir and 1/3 Chardonnay and spends 2 years in the bottle. It is an impressive every day sparkling wine that is value priced. We loved his NV Rose which is 85% Pinot Noir and 15% Chardonnay. It has hints of strawberry and watermelon with a great acid balance that goes well with food. Mountain Dome is the second largest sparkling wine producer in Washington, and the largest family-owned sparkling wine maker in the Northwest.
Dave and I are fans of sparkling wne. Whether it's a Cava from Spain, a Prosecco from Italy or a sparkling wine from Argentina, sparklers are not just for weddings, anniversaries or specials events. Can't decide between a red or a white? Wine or beer? Make every day dinner a bit more fun with a bit of bubbly in your glass!
Scott Shull and his wife Annie make Pinot Gris and Pinot Noir on a 27-acre estate that the winery shares with with Raptors - birds of prey such as Red-tailed Hawks, Kestrels, Sharp-Shinned Hawks and Owls. Scott's wines are characterized by fresh fruit flavors with the delicate aromas of the Willamette Valley. His Pinot Gris is made in the Alsacian style with green apple on the nose and a bit of citrus on the finish. His Pinot Noirs were outstanding. We fell in love with the 2006 Pinot Noir Shea Vineyard. The Shea had a cherry nose with a slight mushroomy earthiness on the initial palate, followed immediately with crisp, wild cherry and plum flavors ending with a subtle peppery finish.
We look forward to other sharing news about food and wines from the Islands and look forward to the pleasure of hosting you for dinner.
Best,
Anna Maria & Dave
