It is the time of year when a simple dinner of soup allows us to stay outside while it is still light & come in for an easy dinner; Try our wonderful Seafood* Corn Chowder.
Seafood Corn Chowder
6 slices bacon, cooked crisp & rough cut
4 Tbls. butter

1 rib celery, sliced about 1/8th
1/3 cup all purpose flour
3 cups milk (2% or higher fat)
2 potatoes, peeled & rough diced
3/4 tsp. salt
3/4 tsp. fresh ground pepper
1 1/2 tsp. fresh garlic minced
1 cube Knorr's Fish or Shrimp bouillon
4 ears of corn cut off cob or 2 cups frozen
1 cup 1/2 & 1/2
1 can crab, picked through
1/2 lb. cooked shrimp 26-30 count, cut in thirds or half
Garnish w/fresh parsley
Cook bacon & set aside. Melt butter in heavy bottom 2 quart pan along with 4 Tbls. bacon drippings. Add onion & celery until softened, about 7 min. Push vegetables to side & stir in flour & cook, stirring constantly for about 5 min. over medium heat, mixing vegetables back in once four has made a nice thick paste. Slowly whisk in milk & cook until the soup starts to thicken slightly. Add potatoes, salt, pepper, garlic, seafood soup base, & corn. Stir until the soup base dissolves. Simmer soup over medium low heat until potatoes are softened, about 12 minutes. Do not boil; stir regularly. Add 1/2 & 1/2, crab meat, shrimp & bacon & cook until just heated through. Garnish w/parsley & enjoy!
Prep Time: 10 minutes. Cooking Time: 1 Hour; Serves 4-6.
*For seafood you can substitute cooked scallops, whitefish, salmon, etc. |
