A PASSION FOR CANDLELIGHT SKIING?
If it is, we have three dates for you to mark on your calendars--
Saturday, January 30 -- Candlelight Ski at Whitefish Dunes State Park, 6-9 pm.
Saturday, February 6 -- Candlelight Ski at Peninsula State Park, 5:30-8 pm.
Saturday, February 13 -- Candlelight Ski at Newport State Park, 5:30-8:30 pm.
Softly swishing skis on snow-covered trails lit by flickering candles describes these annual candlelight events. Bonfires and hot refreshments await skiers at the end of the trail -- a wonderful way to enjoy the beauty of our Door County woods in winter!

CULINARY EVENTS at the INN AT KRISTOFER'S!
Perhaps gourmet food is your passion? The Inn at Kristofer's would like you to join them for a "Five-Course Gourmet Dinner with a One-Hour Cooking Class Demonstration!" In February and March, Chef Terri will be hosting these special Friday evening events:
February 19 -- A Variety of Shellfish. You will be able to taste everything from oysters to mussels, shrimp to clams--and Terri will show you how to clean and prepare the shellfish.
March 19 -- Italian "Fun"damentals! Terri will demonstrate how to make homemade gnocchi and ravioli and then use these items in your five-course dinner.
Both classes of $69 per person include the five-course dinner, one-hour cooking class, complimentary champagne upon arrival, two glasses of wine with dinner and tax. Seating is limited to 24 people in each dinner class.

Red Wine Pear Crisp with Spiced Streusel
Streusel: 1/2 cup all-purpose flour
1/2 cup regular oats
1/4 cup packed brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground allspice
1/8 tsp. salt
3 Tbs. butter, melted
Filling: 2/3 cup cabernet sauvignon or other dry red wine
1/2 cup granulated sugar
1 Tbs. grated lemon rind
1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
4 peeled Bosc pears (firm and not too ripe or they will
become mushy when cooked with the wine), cored and
thinly sliced (about 1-1/2 lbs.). Anjou pears also work well.
Remaining
Ingredients: Cooking spray
3/4 cup whipped topping
1/8 tsp. ground cinnamon (optional)
Preheat oven to 350 degrees.
Prepare Streusel: Combine all dry Streusel ingredients in medium bowl. Add butter, stirring with a fork until crumbly. Set aside.
Prepare Filling: Combine wine and granulated sugar in a large nonstick skillet over medium-high heat and bring to a simmer, stirring until sugar dissolves. Reduce heat to medium. Add remaining Filling ingredients, stirring to coat pears. Simmer for 15 minutes or until pears are tender.
Spoon pear mixture into an 8-inch square baking dish coated with cooking spray. Sprinkle Streusel evenly over pear mixture. Bake at 350 degrees for 30 minutes or until bubbly and lightly browned. Serve with whipped topping. Sprinkle with 1/8 tsp. cinnamon, if desired.
Yield 6 servings (about 3/4 cup crisp and 2 Tbs. whipped topping each).
