Seeing Stars....

It's official; New Zealand skies have an extra sparkle now with the announcement of the world's newest ISDR or International Dark Sky Reserve. The announcement confirms that the McKenzie Basin, the region surrounding Lake Tekapo, has some of the best light pollution free skies in the world, perfect for viewing galaxies and stars that are only visible in the southern hemisphere. Mt John Observatory at Tekapo is New Zealand's main astro-tourism destination and hosts 5 telescopes, including New Zealand's biggest at 1.8 m across, which can observe 50 million stars. Join Tuatara Tours on the Tekapo Canal Trail Cycle Tour and visit the Observatory, to enjoy one of the best star gazing sites on earth. For more details:

Celebrate Chocolate....
|
It's all about the sweeter things in life in Dunedin this July. From July 7 to 13 the southern city celebrates the joys of chocolate with a program of events including chocolate beauty treatments, chocolate tours, wearable arts, and chocolate themed exhibitions in some of the city's galleries and libraries. One of the Carnivals' highlights is the Jaffa race, where competitors race up to 25,000 of our favourite round chocolate treats down Dunedin's steepest street to raise funds for families and children around New Zealand, definitely a sight not to be missed. |
| The Power of Chicken Soup ... | |
At this time of year it's easy to fall prey to the number of cold and flu bugs around despite every effort to stay fit and healthy. Research done in the early 1990's at Nebraska Medical Centre did indeed confirm the benefits of home-made chicken soup in helping to break up congestion and clear the nose. If you are unfortunate enough to succumb this winter, here's a simple recipe to help you get back on your feet.
- 1 whole chicken
- 4 carrots, halved
- 4 stalks celery, halved
- 1 large onion, halved
- water to cover
- salt and freshly ground black pepper to taste
Place the chicken, carrots, celery and onion in a large pot; cover with cold water. Heat and simmer, uncovered for a couple of hours or until the chicken meat falls off the bones (skim off foam every so often). Take everything out of the pot and strain the stock. Pick the meat off the bones and chop or shred. Chop the carrots, celery and onion. Return the chicken, carrots, celery and onion to the pot, pouring back the strained stock. Season with salt and pepper to taste. Reheat and serve. Makes 10 servings.
Other ingredients such as fresh herbs, fresh ginger, beans or rice can be added if you want a little more variety.
