Pumpkin Spice Cookies
With Lemon Ginger Glaze
These cookies didn't look like much at first.
Until I started offering them around.
The spiced aroma wound around the neighbourhood
like a stripper in a convertible. I had friends and
neighbours knocking on my door.
The plate was empty and I had a roomful of folks all
telling childhood stories of Fall and Thanksgiving.
I baked half of the dough as a giant cookie in a pie
dish and covered it with maple, rum and caramel. That
really sent the crowd over the edge.
But the simplicity of the lemon and ginger glaze
makes these unassuming little lumps quite magical.

Pumpkin cookie with Maple Rum Caramel
Boozy-Sticky-Lovely
This is the aforementioned giant-cookie-cum-tart.
The combined wonders of rum, maple syrup and
caramel harmonise into a blissful rhapsody.
If you don't believe me, then speak to the empty pie
dish!
Store bought caramel (Bonne Maman or a good Dulce
de Leche), stir in the rum and maple syrup.
Soft, billowy clouds of whipped cream.
Second helpings, please!

Boozy Bea, The Pumpkin, Rum & Maple Fruitcake
One of my dearest friends is called Bea.
This cake is not named after her.
I concocted this fruitcake and, alarmed at precisely
how much rum it was able to hold (and inspired by its
absolutely titian colouring), I typed 'boozy'
and 'redhead' into Google and it spat back a link to an
article about a boozy rampage Princess Beatrice
allegedly embarked upon.
Boozy Bea was christened!
My friend, Toni-Jean, has been after this recipe for over
a year. Here you are, Madame!

Plenty More Pumpkin
Pumpkin is its own food group.
I adore it.
The evidence is all over my website.
Have a cruise around the recipe section. You'll see
truffled pumpkin ravioli, gingerbread and butter
pudding with pumpkin ice cream, pumpkin soup,
pumpkin scones...the list goes on.
Go high end this Halloween; rent your favourite
Hitchcock film, pop the cork on a bottle of Veuve (hey,
it's got a pumpkin coloured label!) and dig into some
pumpkin!

Horror Stories
This newsletter is being sent from a ubiquitous
Marriott hotel room.
It happens to be Huntsville, Alabama. But in the past 2
weeks it could have been Baton Rouge, Minneapolis,
Boston or Miami.
I'm on the road.
Victim of 3 meals a day that no one cares about
cooking.
I long to be in my own kitchen, reaching into my own
messy spice drawer...
...feeding loved ones...
filling my home with aromas, flavours and full bellies.
I hope that you enjoy these recipes. They are truly
ones that I love cooking myself.
Cheers, Mannix
