Here's one way of cooking saddle-eye fillet of venison.
FOIL BAKED FILLET WITH MUSHROOMS AND REDCURRANT JELLY
(Use rowanberry jelly if you can find it)
For four people you will need 500g saddle-eye fillet venison, 1 heaped tablespoon redcurrant/rowanberry jelly, 100g sliced mushrooms, dessert spoon crushed juniper berries and salt & pepper
1. Season fillet with salt, pepper & crushed juniper berries
2. Spread jelly over the top side and place on oiled foil
3. Add sliced mushrooms and wrap in a loose parcel
4. Cook for 30 minutes (pink) or 45 minutes (beige) in pre-heated oven at Gas Mark 6
5. Slice at the table and serve with new potatoes or mash and one green vegetable
