Bread Pudding with Bourbon Sauce
About 6 cups of stale (dried) French bread cubed into 3/4 inch pieces in a casserole dish.
In a bowl mix: 3 eggs, 1 cup sugar, 1/2 cup brown suguar & 1 tsp. baking powder, and 1/2 stick melted butter.
Add & Mix In: 1 tsp. vanilla, 1 tsp. cinnamon, 1/4 tsp. nutmeg, 1/4 tsp salt, 3 cups milk.
Fold in 1 cup crushed pineapple and 1/2 cup flaked coconut .
Pour batter over bread pieces & let it soak into the bread well. (Add more milk if needed.)
Top with 1/2 cup chopped nuts.
Bake 350 degrees for 30 minutes or until a knife comes out clean .
Bourbon Sauce
Mix in a pan on the stove & bring to simmer : 2 egg yolks, 1 stick of butter, 1/2 cup white sugar & 1/2 cup brown sugar, 1/3 cup apple juice, 1/3 cup Jim Beam (or other bourbon whiskey, or use extra 1/3 cup of apple juice). Pour warm sauce over bread pudding just before serving. |
