Campfire Dinner
Around the campfire is a wonderful place to congregate in the evening to discuss the day's events, plan tomorrow's avenues of discovery, tell ghost stories, relax and cook dinner! The campfire smoke does something unspeakably wonderful to the flavor of the food and the conversations wafting around with the breeze. Try one of these recipes on your next trip and see what wonderful memories develop.
Cast Iron Skillet Dinner 1 Package Polish Sausage
(any kind you like) 3 Sweet Potatoes 3 White Potatoes 1 Large Onion 2 Bell Peppers (1 green/1 red) 2 Medium Yellow Squash Vegetable oil
Using your favorite skillet, heat oil, then add sliced sweet potatoes and begin cooking. Cut other ingredients as listed and add them as you cut. Add sausage last (if precooked) and cook until potatoes are soft. Best when cooked on a campfire, but works fine on stove.
Fish in Foil Any kind of fish that you catch and are willing to eat, cut into fillets (we have used trout, salmon, fluke, flounder and red snapper).
Set fillets in heavy duty foil which can be wrapped up.
Add tablespoon of butter or olive oil, couple of tablespoons of white wine (optional), add juice from half a lemon, seasonings to taste (salt, pepper, and others such as dill, or oregano, basil, red pepper, etc.).
Wrap completely closed in the foil and cook over hot coals or in oven for about 30 minutes.
Shrimp and scallops, along with onions, garlic, and julienne of vegetables, etc. may also be added.
Relatively simple ... tastes great.
Hobo Pouches Chopped Sirloin
(or hamburger or meat of
your preference) Canned Mixed Vegetables Butter or Non-stick spray Seasonings of choice Heavy Duty foil
Double the foil into about a 10 inch square and spray with non-stick spray or cover with butter. Put meat patty in the center of the square and cover with a serving size of mixed vegetables. Season and either add a pat of butter or a coating of non-stick spray. Gather foil sides into a point resembling a hobo's pouch. Do NOT leave an opening for steam. You can cook these on the grill or set them inside a pan if using the campfire...or perhaps even by putting them on a hot stone near but not touching the fire.
Cook until the meat is done. Open and enjoy right from the foil. Have fun with this one. I've tried it with smoked sausage, fish and ham. It's all good!

McCollum Park Pool Open
The popular outdoor pool at McCollum Pioneer County Park opened June 23rd. Thirty-minute swim lessons are offered mornings beginning at 9:00 a.m. Monday through Friday. Amphitheater at Willis Tucker Park opens in July
Construction of the amphitheater at Willis Tucker Community Park is near completion, just in time for the Movies in the Park series. An opening celebration is scheduled for July 17th. Be sure to check www.snocoparks.org often for the grand opening and other park events. |
Cathcart Vision Project
Snohomish County held its second public meeting June 24 to discuss County Executive Aaron Reardon's vision for the Cathcart property. More than 110 residents from the surrounding area filled the main meeting room at Willis Tucker Community Park, once part of the Cathcart property that is now county owned.
Reardon is leading the charge on how best to utilize more than 600 acres of property at the crux of Cathcart Way and Highway 9. The idea is to protect 80 percent of the land for green space, parks and infrastructure while modestly building out 20 percent through private/public partnerships.
Residents offered ideas through small breakout groups, discussing what to do with each section. Proposals include green-built housing, a business center, transportation hub as well as experimental agriculture efforts on the former landfill section of the property.
County planners are now reviewing the comments so as to better define how the property will be used. For more updates or to comment on the Cathcart vision, go to www.snoco.org and search "Cathcart vision."

| Park Rangers Deliver Interpretive Programs
Park Rangers Tom Cowper and Erika Miranda, along with Parks Naturalist Tom Murdoch, recently taught six environmental education classes, guiding 240 seventh-grade science students through a series of ecological consciousness-raising activities at River Meadows County Park.
Park Ranger Cowper displayed a red-tailed hawk on loan from Sarvey Bird Sanctuary in Arlington and talked about her habitat, life cycle and survival skills.
Through exercises such as the "food web," Park Ranger Miranda taught how different animal and planet species connect to one another. Parks Naturalist Tom Murdoch demonstrated how the watershed serves as a filter, how humans impact it and the effect of flooding on forests.
Students also conducted a dissolved oxygen test in the Stillaguamish River and learned about the fish and wildlife that inhabit it, as well as about how to protect the watershed. Park Ranger Miranda passed on the seven principles of "Leave No Trace" to use when they visit parks and other areas of nature. The Evergreen State Fair Celebrates 100 Years  With a Contest-A-Day! When it comes to participating at a Fair, there are contests that have become annual events. Fairgoers have come to expect that they will compete in one or more of a variety of contests with a friend. So, this year, The Evergreen State Fair is planning a Contest-a-Day, in celebration of 100 years of Fairs in Snohomish County!
Most days represent a different decade and the contests are connected to that period. Join in playing Quarter in the Haystack; Egg Toss; Guess the Number of Jelly Beans; Guinness Record Attempt at Largest Gathering of Centenarians; Hula Hoop Race; Bubble Gum Blowing; Pie Eating; 1980s Hair Do Contests; Texting Contests; Guinness Record Attempt at Largest Hokey Pokey; or the Baby Diaper Derby. In addition to the food contests in the Agriculture Display booth, the Snohomish County Office of Economic Development is hosting Grape Stomps, Ice Cream Making, Corn Shucking and a Patriotic Ice Cream Making Contest.
Participating radio stations and sponsors also have their own contests. The winner of the Karaoke Store's Evergreen Country Idol finals will perform before the Gary Allan Concert. State Roofing will offer a Plinko game throughout the Fair. The Washington Lottery has a Scratch Off offer on Tuesday, August 26th. KISS FM will host a Frisbee Throwing Competition and B97.3 will have their Music Trivia Game.
