Fontina Vallet Pietro

 

   

This Italian Fontina is mild but interesting.  It is an excellent melting and snacking cheese.  In this family operation the cheese is made from milk from the cheese makers' brothers' cows.  It is unusual in the high mountain valleys that these cows graze on fresh grass, creating the subtle flavors in Fontina Vallet Pietro.  Find this cheese alongside other mountain cheeses in the cheese case at Quel Fromage.

Lamb "Prosciutto"

Armandino Batali has a lot to say about the creation of this product.  Passionate about meat curing, the man behind Seattle's  Salumi Artisan Cured Meats is particularly fond of lamb.  This seasonally available product is eagerly anticipated by lamb lovers and always sells out.  It is currently available at Quel Fromage and is featured on the recipe below.

 Picnic in a Box

 

 

Yes, they're back - just in time for hiking, biking, boating soccer games, and lazing in the sun.  A $20.00 combination of cheese, baguette, fruit, chocolate and more, these to-go boxes happily feed two people.  Choose from three popular options: the Chuckanut (brie & honey), the San Juan (gruyere and tapenade), and the Mt. Baker (cheddar & salami).  We carry San Pellegrino, wine, and beer for a one stop picnic.  A Fromage A Go-Go can make a trip to the park or a drive down Chuckanut Drive extra special!

Spring Pizza

Fontina, Arugula, & Proscuitto

 

 

4 Servings

Preheat oven & pizza stone, 475 degrees 

 

1lb favorite pizza dough

3/4lb Italian Fontina*, shredded

1 garlic clove, pressed

4 cups arugula, tossed lightly with olive oil

1/4lb thinly sliced prosciutto*

 

Roll dough on parchment paper, prick lightly with fork.

Slide paper and dough onto hot stone, bake 6 - 10 minutes.

Remove from oven and brush with garlic clove, then sprinkle evenly with cheese

Return to oven for 8 minutes more

Remove from oven, scatter arugula over crust, drape prosciutto over arugula

Grate black pepper over the top to taste
