Greetings
Happy Holidays!
During this busy and magical time of the year everyone needs a support crew. Santa has his elves, the staff at Quel Fromage are ready to support you with gift ideas and memorable entertainment solutions.  Our cases are bursting with seasonal cheeses and old favorites.  Back by popular demand is the festive Cranberry Torta, creamy Rollingstone Chevre studded with cranberries, walnuts, and orange zest.  The nuns at Abbaye Notre-Dame de Bonne Esperance produce Echourgnac, a smooth buttery cheese matured in walnut liqueur that pairs beautifully with Earth & Vine's Apple Cranberry Pear Chutney full of spicy nut and fruit flavors.  Our latest delivery from Seattle's Salumi just arrived, including some of the seasonally produced Oregano Salumi.  Our elves have been searching high and low for exquisite treats to keep you jolly, and make gift giving a delight.  Perhaps a bottle of port and wedge of Stilton for your favorite coworker.  A selection of truffle treats (Truffle Oil, Truffle Butter, Truffle Almonds, and Truffle Honey) for your friend who loves to cook.  Or let the recipient enjoy the experience of shopping at Quel Fromage and give a QF gift certificate paired with a Vosges Chocolate bar.  We will be open 7 days a week during December.

Happy Holidays,
Le Fromage Crew

Jo's Candies

Two delightful handcrafted holiday treats from Jo's Candies are awaiting your discovery at Quel Fromage.   The seasonal flavor of peppermint infuses the creamy chocolate of Jo's Peppermint Bark.  Traditional crushed candy canes top this fresh and attractive confection.  Made by the same candy artisans, the Dark Chocolate Caramel Grahams are an experience in indulgent balance!  The smooth dark chocolate covers a mildly crunchy graham cookie and a chewy ribbon of caramel.  The finishing touch is a generous sprinkle of sparkling salt crystals, truly a combination to savor.  Enjoy one alongside a cup of hot tea while checking your list.

Catering & Cheese Platters
No gathering too large or too small
Whether you're planning a romantic evening for two, a book group celebration, or the office party, our staff can create a custom platter for you!  Select your favorite cheeses or allow our staff to recommend an assortment appropriate for your event.  Cheese naturally takes the staring roll on our platters, however we also have delicious meats, dried fruits & nuts, and enticing sweets. Choose from our wooden Brie boxes lined with French parchment leaves, or bring a serving piece from home.  For larger events we have an assortment of gorgeous serving pieces to select from.  Calling ahead allows us to have your tray ready when you arrive.

Seasonal Recipechocolate fruit balls
Fruit-Nut Balls

These are perfect for any dessert course of cheeses and incorporate many of those dried fruits we get the opportunity to enjoy in the present season.

1/2 lb dried cherries
1/2 lb dried Turkish figs
1/2 lb dried apricots
1/2 lb dried pitted prunes
1 cup walnuts, finely chopped
1-2 Tablespoons Grand Marnier, or other liqueur
Powdered sugar, for coating
8 oz semi-sweet chocolate, such as Valrohna

Pulse all dried fruit in food processor until no pieces are larger than a pea. Remove to a bowl, and mix in walnuts. Add one tablespoon of Grand Marnier and stir to combine. Test liquid proportion by rolling a small amount of mixture between your palms. If it does not hold together in a tight ball, add more Grand Marnier.

Now pinch off and shape one-inch balls of the mixture, rolling each in powdered sugar and arranging on a lined baking tray, where they will sit at room temperature for 24 hours.

When ready, melt down the chocolate in a double boiler. A small deep spoon or ladle is then the perfect tool for scooping out portions of hot melted chocolate and placing a generous plop on each ball. Transfer the baking sheet to the refrigerator until the chocolate has hardened. Store them in an airtight container, chilled, for up to 2 weeks.
