Greetings!
The latest wheel to make its sensational debut in the shop is completely encrusted in coffee grounds and lavender. Sound intriguing? The truth is, this goes beyond a simple crush - we are completely enamored with Barely Buzzed!
This hand rubbed delight arrives to us straight from Beehive Cheese Co. in Utah. The cheese maker looks to his brother, owner of Colorado Legacy Coffee Co. for the Turkish grind of "Beehive Blend" coffee. The addition of ground French Superior Lavender makes for an amazing blend. The rub imparts notes of butterscotch and caramel which are most prevalent near the edible rind, perfectly complimenting the full nutty flavor of the interior.

Chinook Wine Tasting  
Please join us on Friday, April 11th for an evening at the shop with winemaker Kay Simon of Chinook Wines. Kay will be pouring Chinook's Sauvignon Blanc and Cabernet Franc from 6-7:30 and Quel Fromage will provide a selection of expertly paired cheeses.

While many assume that Cabernet Sauvignon is the older, more noble varietal it has been discovered through DNA to be the 'child' of Cabernet Franc & Sauvignon Blanc. Which just begs that age old question..."who's your daddy?"
Cost is $25 per person and space is limited to the first 20 respondents.

Evening of Indulgence
We were thrilled to support Domestic Violence & Sexual Assualt Services of Whatcom County in their annual funraising gala by donating a night of epicurean debauchery at the shop... Quel Fromage after hours. The evening began with a pop of Champagne and featured five courses paired with wine, including among many other treats a classic Cave Aged Gruyère fondue, charcuterie and Burrata caprese. Look for your chance to join us at three upcoming live auctions supporting local causes.
 
Domestic Violence and Sexual Assault Services takes a leadership role in providing collaborative ways to engage the community in becoming active participants in ending domestic violence and sexual assault.

Cheese Quiz
Many fine cheeses are produced and sold with a coating of ash. What is the purpose of using ash in the production of cheese?
 
It may be purely decorative or used to keep with tradition. At one time a layer of ash separated morning milk from evening milk and served to keep the flies out in the interim.
Ash aids in mellowing acidity and also makes the surface of the cheese more hospitable to the growth of beneficial molds that add to the overall complexity of flavor.
Many cheeses (especially young goat) are coated with a sprinkle of ash. Today a tasteless, finely ground food-grade charcoal ash is used. Ash coated cheeses also exhibit a dramatic contrast in color. In the case of Humboldt Fog, it echoes the ever-present rolling fog of Humboldt County.
