My Cheesy Valentine
February 2008

Greetings!
Rachel and Esme have returned from their weekend-a-whey at the Fancy Food Show in San Diego. After a grueling stint of extensive research, some of the new finds are beginning to arrive!

New and scrumptious...

Prima Donna Maturo hails from Holland with the nuttiness of a gruyere and the sweetness of a Parmiggiano. This crowd pleaser is sure to win you over, especially when paired with our fig bread and a glass of Liberty School Cabernet Sauvignon.

Balarina is a goats milk gouda style with the shaveable texture and the irresistible protein crystallization. This crumbly caramelly treat melts in your mouth with explosive character and crunchy texture.

Gormandises Overhead

Finally, delicate little gourmandises from Fromagerie Soreda (pictured above). Each fresh miniature goat cheese is decorated with rose petals.
$13 for the collection

Perfect to share with your Valentine are our mini stoneware pots of chocolate fondue. Microwaveable, they retain their heat for 40 minutes and are available in milk or dark chocolate & are imported from France.

Happy Valentine's Day,
Rachel & the Quel Fromage crew

Cheese Quiz
How much milk does it take to make cheese?

It takes a surprising amount of milk to make a small amount of cheese. The general rule is, to make 1 pound of cheese you need about 10 pounds of cow's or goat's milk, or about 6 pounds of the richer sheep's milk.
