Vendor Profile: Feast Catering


Erika Yochum grew up cooking and baking with her aunt and business partner, Pat Sellers. Their first venture together began in 1992 as Harvest Moon Delicatessen and Juice Bar in Plymouth, Michigan.  It was a pioneer venue that had a loyal following for organic juices and vegetarian specialities.
 
Upon moving to Indiana in 1998, Erika continued baking for local restaurants and doing private catering. In 2005, Erika and Pat began Harvest Lodge Catering, selling their now famous artisan tamales and scrumptious baked goods at the Bloomington Summer Farmers Market.

Since then, they've expanded to several Indianapolis markets, art fairs, and local events. In 2008, Erika was asked to be the chef at Traders Point Creamery, where she helped create several new menus and won Best Brunch Spot by Indianapolis Monthly. She has since left Traders Point to concentrate with Pat on their newly re-named and ever growing business, Feast Catering.

Green Gazpacho

Beat the heat with this tasty, healthy and oh so easy gazpacho.  Got leftovers?  Freeze extra gazpcho in an ice cube tray and use the cubes in place of plain ice in Bloody Mary's.

Ingredients
  • 2 cups coarsely chopped seeded, peeled cucumbers
  • 1 cup chopped Romaine lettuce
  • 1/2 cup coarsely chopped green bell pepper
  • 1/4 cup coarsely chopped onion
  • 2 tablespoons olive oil
  • 2 tablespoons sherry wine vinegar
  • 1 tablespoon coarsely chopped fresh cilantro
  • 1 garlic clove, minced
  • 1 cup (2 ounces) cubed crustless white bread
  • 1 1/2 cups water
Directions

Puree first 8 ingredients in food processor. Add bread and let stand until soggy, about 2 minutes. Puree until smooth. Mix in 1 1/2 cups water. Transfer gazpacho to large bowl. Cover and refrigerate at least 2 hours.  Gazpacho can be made up to 2 days ahead. Keep refrigerated.
