Vendor Profile:  Capriole Goat Cheese


Capriole makes its fresh, ripened, and aged chevres by hand, using only the milk of their own herd. Capriole offers...

Fresh Goat Cheeses: fragile, fresh curd, ladled by hand to yield chevres of fine texture. Lower in cholesterol and calories than cream cheese, they're a lighter alternative in favorite recipes
.

Surface Ripened Cheeses: Similar to the chevres found in French farm markets. After being shaped or unmolded, the fresh curd is dried slightly and then enters the cave where the cheeses form a wrinkly, white rind like their European cousins.

Aged/Raw Milk Cheeses: Made from raw milk, these semi-hard cheeses are aged from 4-8 months. Their natural rind protects them as they develop flavor and character.

Goat Cheese and Beet Crostini 


This is just one of the many great recipes found on Capriole's website.  The beets and goat cheese mixture can be assembled ahead of time and put together before serving at room temperature.  Should make about 24 crostini.

Ingredients
Beets:
* ¾ lb. beets (about 2 medium)
* 1 c. water    
* 1T. balsamic vinegar
* 1t. grated lemon rind
* 1t. fresh lemon juice
* ¼ t. sea salt
* ¼ t. freshly ground black pepper

Cheese spread:
* 1  5 oz. Capriole fresh goat cheese,
* 1 T.  mayonnaise
* freshly ground black pepper
* 1  garlic clove, crushed

* 24  (1/2-inch-thick) slices diagonally cut, French bread baguette, toasted

Directions:
Preheat oven to 375°. To prepare beets, leave root and 1 inch of stem and scrub with a brush. Place in saucepan and cover with cold water.  Simmer for about 30 minutes or until just tender when pricked with a fork. Drain, cool, and rub off skins, tops and roots. Cut beets crosswise into 1/8-inch slices.  Should have about 24 slices.

In a medium bowl combine the vinegar, rind, juice, salt and 1/4 teaspoon pepper. Add sliced beets; toss gently to coat.

To prepare cheese spread, combine goat cheese, mayonnaise, pepper, and garlic in a small bowl. Spread each baguette slice with 1 teaspoon cheese mixture; top with slices of beet.
