| Balsamic Strawberry Salsa |
| |
Southern Living, April 2002
This make-ahead recipe is great break from the ordinary. For an added twist, try using your favorite infused balsamic vinegar from Artisano's. We like the white peach, but blueberry or pomegranite balsamic sound like tasty options too.
Ingredients:
6 tablespoons olive oil
2 tablespoons white balsamic vinegar
1/2 teaspoon salt
1 pint fresh strawberries, coarsely chopped
8 green onions, chopped
2 pints cherry tomatoes, chopped
1/2 cup chopped fresh cilantro
Directions:
Whisk together first 3 ingredients in a large bowl; add strawberries and remaining ingredients, tossing to coat. Chill at least 1 hour. Serve with tortilla chips.
Yield: 6 cups |

Did you know that the BRFM does not pay its musical guests to perform? They generously volunteer their time and talents. If you like what you hear, please consider leaving a tip to show your appreciation. You can view a tentative schedule of BRFM musical guests by clicking here. |
