The hustle and bustle of the season is upon us and we know what that means: a lengthy list of things to do, gifts to purchase, people to contact. Did you know that between Thanksgiving and Christmas each year, there are about 19 billion packages, cards, and letters delivered to the U.S. Post Office? That's a lot of work in the near future!

In the this newsletter edition of A Busy Mom's Kitchen and the upcoming blog posts of Noel's Kitchen Tips.com, I am focused on two words: entertaining essentials. I'm striving to bring everything back to basics when it comes to the holiday season. You'll find meal solutions whether you're planning a casual game-time event, an upscale and elegant dinner party, or the perfect party spread for New Year's Eve.

This year, forgo the black tie affair and stay at home! Here's the catch...don't watch the ball drop alone in your pajamas. Gather your neighbors and nearby friends for a festive dinner.

Tips From The Kitchen: Turkey Storage Advice from the National Turkey Federation

 Let's Talk Turkey!

Following proper storage procedures is important for food safety and to maintain the best quality of the turkey.

When you return from the grocery with raw turkey, place it in the original wrapper in the refrigerator; a hard-chilled turkey should not be placed in the freezer. If the turkey is frozen and the thawing process does not need to begin, store in the freezer.

Storage of Raw Turkey:  

Refrigerated Storage: at 35-40 degrees F Freezer storage at 0 degrees F or below
 
Whole Turkey:1 to 2 days 12 months Turkey Breasts 1 to 2 days 3 months

Care must be taken to properly store leftover cooked turkey. The leftover turkey should be carved from the bone and the stuffing removed. All leftovers should be stored in shallow containers and refrigerated or frozen within two hours of cooking. NTF recommends that cooked, sliced turkey reach 40 degrees F within two hours or less. When reheating, be sure the turkey reaches a temperature of 165 degrees F. Turkey gravy should be used within 1 to 2 days, be sure to bring the gravy to a boil before serving.
 
Storage of Leftover Cooked Turkey

Refrigerated Storage at 35-40 degrees F: 3-4 days 

Freezer Storage at 0 degrees F or below: 3-4 months

Featured Recipe: Maple-Cashew Mini-Tarts
Maple Cashew Tarts
This modern spin on pecan pie still brings all the comforts of home.

  

 

Ingredients:

  

1 cup (250 mL) salted cashews

2 eggs

1/2 cup (125 mL) packed dark brown sugar

1/2 cup (125 mL) pure maple syrup (do not use maple-flavored pancake syrup), divided

1 tbsp (15 mL) butter, melted

1 tsp (5 mL) Double-Strength Vanilla

1 pkg (15 oz/350 g) refrigerated pie crusts (2 crusts), softened according to package directions

 
 

Directions: 

 

Preheat oven to 375°F (190°C).

 

Coarsely chop cashews with Food Chopper. In Classic Batter Bowl, combine eggs, brown sugar, 1/3 cup (75 mL) of the maple syrup, butter and vanilla.

 

Whisk with Stainless Whisk until smooth. Stir cashews into egg mixture; set aside. 

 Unroll one pie crust onto Pastry Mat. Using wide end of clear Food Chopper collar, cut out six pastry circles. (Circles will measure 33/4 in./9.5 cm. Discard remaining dough.) Pinch edges of circles inward at 1/2-in. (1-cm) intervals, creating ruffled shells. Place shells into Muffin Pan wells; repeat with remaining pie crust.

Stir cashew mixture until combined; pour evenly into shells until two-thirds full. Bake 18-21 minutes or until shells are golden brown. Remove pan from oven to Stackable Cooling Rack; cool completely. Brush tops of tarts with remaining maple syrup.

Yield: 12 mini-tarts

Nutrients per serving: (1 mini-tart): Calories 270, Total Fat 14 g, Saturated Fat 4.5 g, Cholesterol 40 mg, Carbohydrate 33 g, Protein 4 g, Sodium 160 mg, Fiber 0 g

Cook's Tips: To create pastry shells with the prettiest fluted edges, it's best to shape them before placing them into the Muffin Pan. After shaping each shell, immediately place it into the pan well.
