Well, it's that time of year. The time is counting down. Moms, you know what I'm talking about! It's that time of year when parents of school-aged children are doing a happy dance. As much as we enjoyed the summer, our kids are excited to start another fun-filled school year. 
 
This past weekend, we finished some last minute Back-To-School shopping, and I think we accomplished a lot and found some great bargains. Kids go through clothes and shoes so quickly, I was happy to find such great deals. I was also excited that I found 27 outfits in brand new condition on Ebay for $5.00!!! Can you believe it? It definitely pays to do your research online.
 
This week in the kitchen, we will continue with the Make-Ahead Meal Ideas focusing on other main ingredients. This week we'll be focusing on using Chicken as our main ingredient. While shopping at Raley's, I was able to purchase 3-packs of chicken breasts for $1.87lb. You know that's a deal when a pack of boneless, skinless chicken breasts usually cost around $10-$11. What a deal!
 
This week, I'll also be working on breakfasts ideas that Boosts Energy to give your kids a jumpstart to the school day. Breakfast is the most important meal of the day. It gives kids energy and motivation to start their day.
 
For the next two weeks, I'll also be experimenting on a single recipe in preparation for Raley's In-store magazine, Something Extra. I was asked by the managing editor if I wanted to participate in the Holiday Challenge and create a fast recipe for families in under 30 minutes, using at least 3 Raley's Dailies. The recipe will be featured in their Holiday issue. This is truly an exciting honor.
 
This will be a fun and adventurous time for us in the kitchen.

  BREAKFASTS That BOOStS ENERGY
  

Sharing the first day of school can truly be an exciting time for both you and your child. There always seems to be a twinkle in their eyes and they are eager to see old friends and happy to make new ones. For those who are nervous, parents do their best in offering encouragement to relieve their anxiety.

 

One of the things we can do as parents is making sure our children have a healthy breakfast before school.  Breakfast is the most important meal of the day. It gives them energy and motivation to start their day. That's why breakfast is the perfect time to make it a pleasant family gathering to start the day.  By making a special breakfast, your children will be off to a great start. 

  
Good choices would be muffins, oatmeal, cream of wheat, granola, sunrise sandwich, waffles or pancakes.
Featured Recipe:Make-Ahead Chicken
 
Preparing multiple meals at once saves time, money and energy, especially on those busy weeknights. This week at Noel's Kitchen Tips.com, we'll be making three different meals using the simple recipe below.
  
 
Ingredients:
 

3 lb boneless, skinless chicken breasts or thighs

1 tbsp vegetable oil

  
Directions:
  
 
Cut chicken into ½-in. cubes using *Chef's Knife.
 
Heat oil in (12-in.) Skillet over medium-high heat 1-3 minutes or until shimmering. Add chicken and cook 7-10 minutes or until chicken is no longer pink, stirring occasionally. Drain chicken, if necessary.
 
Divide chicken into three portions.
