Wear your sandals and shades and join us by the pool! Our first "stay-cation," vacationing in our hometown, was a huge success. Being from California, we love the water and spent a great deal of our family staycation enjoying the pool, and reading a good book while working on our tans. The weather was absolutely perfect! 
 
Earlier this week, I shared on the blog about our camping out in the backyard. The kids absolutely loved it and what made it more fun was letting them tell the ghost stories.  Throughout the week, I was also able to work on my ideas for my upcoming August Kitchen Digest E-Book which will feature Back To School Meal Savings Ideas as well as tips and strategies to help Busy Moms ease back into the swing of things once school starts.

Tools for Making Quick Meals!

To help with your everyday cooking, I've chosen some kitchen tools to share with you that will benefit your day to day cooking.

Micro-Cooker- Quickly and easily steam fresh or frozen veggies, make mashed potatoes, warm up soups or leftovers.

Roasting Pan-Cook 3 meats at one time, eating one and freezing the others for a quick dinner on another night, make a double lasagna or casserole- one to freeze, use on top of 2 stovetop burners for an extra large skillet.

Apple Wedger- Quickly core and slice apples or pears

Garlic Press- Quickly crushes garlic without peeling or getting the smell on your hands

Cookie Scoops- Quickly and easily fill muffin or cupcake pans or drop cookie dough, make meatballs, make equal size pancakes, and much more!

Egg Slicer- Quickly slice hard-cooked eggs, mushrooms, small cooked potatoes, strawberries, beets, kiwi fruit, bananas, and more

12" Family Skillet- Cooked without adding margarine or oil because of non-stick surface, cook 4-5lbs ground beef or 7-8 chicken breasts at one time, make a quick skillet dinner with all ingredients- veggies, potatoes, meat, etc- in one pan, clean-up is a breeze!

Whisk Collection- Quickly whips and blends dressings and sauces so they're smooth and creamy, the Silicone Whisk is great for sauces and gravies in the pan since they won't scratch

Deep Covered Baker-
Cook a whole chicken in the oven all day so dinner is already done in the evening, thaw or fully cook a chicken or pork tenderloin in the microwave without making the meat tough, make microwave dishes quickly and easily either in microwave or oven, convenient cover and properties of stoneware keep food warm for hours

  Power of love, the strength of family, and the importance of living passionately and treasuring every day of one's life. 


 

 

Over the weekend, the hubby and I decided to sit down and watch Remember Me with Robert Pattinson. I had seen the previews but hadn't really paid much attention, thinking it was just another one of those teen romance movies. To tell you the truth, I was actually impressed with the story line and the message the movie was delivering. Yes, it had the teen romance, but it was so much more than that. This is actually an engaging film that is simultaneously heartbreaking and heartwarming. It goes far beyond romance. It's about forgiveness and and acceptance.

Both characters experience family tragedies that shape their realities and change their relationships with their families. The true journey in this film is coming to terms with those losses and finding a way to be happy again. What I liked most about this movie was its sense of reality.
 
Just like in the real world, there are tender moments and awkward moments. There is happiness and sadness. There are moments that make you cringe and moments that have you laughing at loud. It is realistic. The journeys these characters take seems real to me. 
 
For me, the ending is the most memorable. It is undeniably sad, but at the same time...makes you realize whatever tragedy you've suffered, you should take what is good in your life and hold onto it. Cherish those family moments, because they could be taken away from you at any point.

Featured Recipe: Strawberry Spinach Salad with Goat Cheese Bruschetta
A flavorful and elegant spinach strawberry salad.
Strawberry Spinach Salad
 
 Ingredients:
 
1/4 cup sugar
2 tablespoons sherry or white wine vinegar
1 1/2 teaspoons sesame seeds, toasted
1 1/2 teaspoons olive oil
1 teaspoon minced red onion
3/4 teaspoon poppy seeds
1/4 teaspoon Hungarian sweet paprika
1/8 teaspoon salt
6 cups torn spinach (about 1 pound)
2 cups halved strawberries
2 tablespoons slivered almonds, toasted (optional)
1 (3-ounce) log goat cheese, cut into 6 slices
6 (1-ounce) slices French bread, toasted
 
 Directions: 
 
Combine the first 8 ingredients in a jar; cover dressing tightly, and shake vigorously.
Combine the spinach and strawberry halves in a large bowl, and toss gently. Pour the dressing over the spinach mixture, tossing gently to coat. Spoon 1 cup salad onto each of 6 plates; sprinkle each serving with 1 teaspoon toasted almonds. Spread cheese over toast slices; top each salad with 1 bruschetta.

Yield: 6 servings
