Winter? What winter? We have been blessed with an incredibly mild winter this year. As I write, it is 62 degrees and sunny. Our concern for the future is that this will be a terrible year for insects as the ground has not stayed frozen for any length of time to kill the dormant eggs.
 
It's hard to believe, but we start interviews for interns this week and shear sheep the next. Spring will be right around the corner. We had a couple of does escape their pasture and visit the bucks (with a purpose in mind) so we recently had two baby goats born. The major onslaught of Baby Birthin' starts March 15th.

Peaceful Pastures is looking for NEW HELPERS both here on the farm and at the markets. The p/t on site PP helper will have light clerical duties as well as helping to fill CSAs and other meat orders. The p/t market helper will take our truck from here and go to the markets in Nashville and Franklin. Please pass the word and let us know if you are interested! 

Lastly, if you are a CSA subscriber and did not pay the full amount up front, the balance is due by February 1st.

Minute Steak Bake

 All of our long-time customers and GA/FL people will know my friend Cathy who used to do our customer service (and now co-pilots most of the GA/FL runs). This is her all-time favorite PP recipe!

 

2 pkgs Peaceful Pastures Minute Steaks (thawed)

1 can cream of mushroom soup

10+/- ounces red wine (or milk or even chicken stock)

1 TBL Penzey's Spices English Prime Rib Rub (optional)

 

Using a whisk, mix all ingredients except steaks. Spray a 9x 13 pan with non-stick spray and spread minute steaks into one layer, top with half of soup mixture, then remaining steaks and soup. Cover with aluminum foil and bake 350 degrees for 2 hours. You can also use this recipe in the crock pot!
