Boy, is it ever HOT!!!
We had our last litter of summer piglets two weeks ago. The male goats escaped so we'll have babies in November instead of March..... the extreme heat has slowed the growth rate of this Spring's lambs.

At my last market I had one customer tell me that we "stopped doing bacon this year" and another that we had been "out of bacon for MONTHS." I had to both laugh and shake my head...we have (only) been out of bacon for four weeks; though if you love it as much as I do, it can sure seem like forever! Bacon will be back in stock by August 13th. The NEW Hot Italian and Andouille sausages will be here as well.

You may or may not know that egg production drops dramatically in the summer due to heat and to summer molt (when birds lose their feathers and grow new ones). Our egg count is down 80%, so if you want eggs at the markets, you need to be there at opening.

Grilled Pork Burgers with Savory Pickled Peaches

 

From Whole Foods...Perfect for peaches that begin to overripe when they are plentiful and juicy.

� pound (about 3) firm peaches, peeled, pitted and cut into (1/2-inch) chunks
1 small red onion, half thinly sliced, half finely chopped, divided
2 tablespoons apple cider vinegar
2 tablespoons water
2 tablespoons Dijon mustard, divided
1 tablespoon sugar
Salt and pepper to taste


2 teaspoons olive oil, plus more for greasing
1 pound  Peaceful Pastures ground pork
� cup packed baby spinach, chopped
2 whole wheat pitas, halved OR four whole-wheat hamburger buns

Put peaches, sliced onions, vinegar, water, 1 tablespoon of the mustard, sugar, salt and pepper into a small pot and bring just to a boil over medium high heat. Reduce heat to medium/low and simmer, stirring occasionally, until liquid is thickened and peaches are very tender and just starting to fall apart, 5 to 7 minutes. Transfer pickled peaches to a bowl and set aside to let cool. (If there seems to be too much liquid, drain, if needed.)

Meanwhile, grease grill grates with oil and preheat grill to medium high heat. In a large bowl, combine pork, chopped onions, spinach, remaining 1 tablespoon mustard, 1 teaspoon salt and � teaspoon pepper then form the mixture into four patties. Brush patties all over with oil then season with salt and pepper. Grill burgers, flipping once, until deep golden brown and cooked through, about 7 minutes total.

Tuck one burger into each pita half or hamburger bun. Spoon pickled peaches onto burgers and serve.
