Grilled Pork Kebabs with Asian Flavors
1/4 cup fish or soy sauce
1/4 cup sugar
1/4 cup vegetable oil
1/4 cup lime juice
3 medium garlic cloves, minced
2 teaspoons minced fresh ginger or 1 teaspoon ground ginger
2 medium scallions, thinly sliced
2 tablespoons minced cilantro leaves
1 package (~1 pound Peaceful Pastures) cubed ham, thawed
Combine first 8 ingredients, stirring to dissolve sugar, add pork and toss to coat evenly. Cover and refrigerate at least one hour and up to 8 hours.
Preheat grill with all burners on high, about 15 minutes, then decrease heat to medium. Skewer meat while the grill heats. Grill the skewers, turning 90 degrees every 2 minutes. Internal temperature should read 140. Remove from heat, cover with inverted plate and allow to rest 10 minutes before serving.
