LOTS of new babies here! 4 pigs have had their litters and we have 25+ kids running around everywhere! We start to calve this month and next month will bring the lambs, which are probably my favorite.

 

I have written about this before, but wanted to briefly revisit the increases we have faced in beef processing costs. Since February of 2008, our cost for having an entire cow ground into ground beef has risen by 200%. Prices for steer cut into steaks and roasts have gone up 100%. Much of this is due to "new and improved" regulations--and is completely outside our realm of control. We have tried to keep our price increase to a minimum to maintain of philosophy of keeping our products affordable for families, but we had no choice but to raise beef and CSA (as they contain beef) prices for 2011.

 

On Valentines' Day Darrin and I will celebrate our 18th anniversary; I have to smile when I think of how quickly the time has passed. I am reminded of an old "Ziggy" cartoon in which he is seated in a recliner with all of his pets on his lap and the caption reads, "Familiarity Breeds CONTENT."

 

February 7/8 we will be shearing sheep and our offices will be closed as all hands will be at the barn to help!

February 15 we will start accepting sign ups for the Summer (May-October) CSA season for full and half shares. Prices are as follows:
Full Share: Regular $650 - 3 Meat $690 - Pork Free $715
Half Share: Regular $375 - 3 Meat $$395 - Pork Free $405

 

CURRENT CSA SUBSCRIBERS save $25 when you sign up and pay in full by May 1.

 

LAMB & Goat!!!

We will have PLENTY of lamb and goat starting the end of this month. this is a great chance to stock up on your favorite cuts, order a Leg of Lamb for Easter dinner, or get your own whole lamb/goat, custom cut to your specifications. After the end of May we do not anticipate having many retail cuts nor any whole lamb/goat available again until fall so don't let this seasonal, yummy, opportunity pass you by!
FEBRUARY Special 

We have plenty of (whole) lamb and goat available! You can have them custom cut to YOUR specifications! this is a great way to save on retail cuts and have juicy leg of lamb for Easter dinner.

 

A $100 deposit per animal reserves your choice of lamb or goat. The final cost is approximately $225-250 per animal for 45-55 pounds of meat (depending upon the amount of deboning.)

 

SPECIAL: Buy one lamb or goat and get $25 off the second animal (same species)


Sweet and Sour Crockpot Beef
 
1 Peaceful Pastures Beef Roast: Chuck, Sirloin Broil or London Broil, deboned and cubed into 1" cubes
OR
2 packages Peaceful Pastures Stew Meat
 
2T canola oil
2 cans (8 ounces) tomato sauce
2 cups sliced carrots
1 head cabbage, cored, and cut into 1" cubes
1 medium onion, chopped
2 large green pepper, cut into 1" pieces
1/2 cup molasses
1/3 cup cider vinegar
1/4 cup sugar
2t chili powder
2t paprika
1t salt

In large skillet, brown steak in oil; transfer to a 5 qt. slow cooker. Add all other ingredients and just enough water to cover and stir.

Cover and cook on low for 7-8 hours or high for 4-5 hours until meat is tender. Thicken if desired. Serve with pasta or rice.
