WOW! Am I ever running late in sending this e-newsletter! Seems like life has just gotten away from us. Alice, our intern, finished up her internship with us so it is now just Darrin, Miss Tina (customer service) and me on the farm. 

I'm up to 4 calves in the yard: Al, Isaac, Squeaker (named for her unusual but very loud "moo") and Mini-Moo.

LAMB and GOAT come back from the processor this week! As always, these will be in high demand and short supply, so be sure to buy early! This will be ALL of the lamb and goat until December.
 
I'm working on recipes for HOT Italian sausage and chorizo -- not sure if we will have them in 2010 yet as I can't get the spice blends "just right."
 
Chestnuts are falling as I type... You'll see them up on the web site soon and at the markets this week!
 
We are again having issues with the shopping cart of the web site. It is tied up with the host service and we are unable to make any additions or changes (yet); PLEASE call or email to order or check availability. The new lamb, goat and duck
are NOT listed there.

FARMERS MARKET NEWS
  • We're taking sign ups for the WINTER CSA that will run November - April. CSAs are a great way to save money on retail pricing and enjoy a variety of products!
  • If you are an existing CSA customer, you will again get a $30 gift certificate for renewing; it can be applied to meat, fleece and soap (but not eggs or yarn).
  • The Farmers Market runs through October, so you still have almost 2 months to enjoy farm fresh produce, meats and other goodies!

Each month we offer a product on sale. The marked down price will appear on the web site, but the only notification of the sale will be via Constant Contact newsletters.
 
PORK TENDERLOIN - Super tender! 1 1/2 to 2 1/2 pounds each, $8.99/pound. Not on the website. Email or call to order.
 
DUCK! YOUNG (8 weeks) duckling, 2 to 3 pounds each, 100% grass-fed and grass finished, very limited supply, $9.99/pound.
 
LAMB & GOAT - selected retail cuts [cubed, ground, chops, rear leg steaks, ribs, shanks, shoulder roast (lamb only)] are back in stock. This is the only lamb/goat we will have until mid December at the earliest.
Citrus Roast Duck
 
Start with a Peaceful Pastures Duck

After thawing, brine duck overnight in 1 cup salt, 1/2 cup sugar in 1 gallon water.
 
Preheat oven to 450 degrees, remove duck from brine and place 1/2 orange cut into quarters and 2 TBL fresh sage leaves into the cavity. Place bird in roasting pan, breast side DOWN. Put into oven and drop heat to 275 degrees. Bake until the thigh meat registers 150-155 degrees in the thickest part of the thigh. Note that duck is not served 100% well done like chicken.
