May Recipe-Goat Stew

Find us on Facebook
The Month of May has arrived and the winter lull is over - whether we are ready or not! Some of the markets start this week and GA/FL deliveries are next week. My sister-in-law, Jill is making the trip with me for the first time.

We're about halfway through lambing season and the pastures are now shin deep in clover and orchard grass, but the Bermuda isn't up yet.

One intern starts May 10 and the other June 1. You can expect to see a lot of them at the markets this summer. Speaking of markets, this year we were invited to participate in the Vanderbilt Farmers Market, so we will be there on Thursdays starting May 27. Don't forget that you can always find our schedule on the "Calendar" page of our web site.

The potatoes and tomatoes are in the garden. I'm waiting for the moon to change to a more favorable sign before planting corn and beans. I put out okra, eggplant and watermelon plants, but the chickens breached the fence and ate all of them. One hen is setting a nest on the ground. She has stayed put through all of the rains and the storms. I have to give her credit for maternal perseverance.

Important CSA Information

Unfortunately we did not have enough subscribers to make CSA deliveries to St. Henry, J Percy Priest Dam or Atlanta. But take heart, we have lots of other locations and we'll try these again next year!

If you signed up before the May 1 deadline with your first CSA installment you will also get a dozen eggs! We want you to try our eggs and we think you'll be hooked! (This is a one-time introductory extra!)

Goat Stew, 2006, Robert Irvine, All rights reserved

2 medium onions, roughly chopped
2 cloves garlic, chopped
2 large carrots, diced
3 stalks celery, chopped
1/2 Scotch Bonnet pepper, seeded and chopped (while handling, protect hands and eyes and avoid breathing in fumes)
2 pounds boneless goat meat, cubed
Salt and freshly ground black pepper
1/4 cup canola oil
1/4 cup (1/2 stick) butter
1 (6-ounce) can tomato paste
1 cup vegetable stock (or red or white wine)
2 tomatoes, chopped
2 tablespoons chopped parsley

Directions
Combine onions, garlic, carrots, celery and pepper in a large bowl. Season the meat with salt and pepper and toss meat with the vegetables. (Protect yourself from contact with Scotch Bonnet peppers.) Cover and marinate in the refrigerator for at least 2 hours (the longer the better).

Heat the oil and butter in a large saucepan and add the meat/vegetable mixture, browning all sides of meats and cooking for a few minutes to integrate flavors. Add the tomato paste and stock. Cover and reduce heat. Simmer until meat is fork tender (at least 1 1/2 to 2 hours), checking occasionally to make sure there is adequate liquid in the pot. (This recipe is also great cooked slowly in a crock pot.) Once the meat is tender, add the chopped tomato and parsley and serve.

From My Window
A gas grill sits right outside my office window. It has seen better days and I was hoping for a new one this year. Some little birds helped me out; they built a nest inside the hood of the grill! Of course it would be beyond rude to disturb them, so the answer was of course to get a new grill!

Blessings,
Jenny
