Easter is just a few weeks away and I love buttercream eggs! I used to order them every year when my daughter was little and she loved them! My dear hubby did, of course, too. So I went on a hunt and found what appears to be the recipe the Mennonite ladies may have used years ago. Last year I ordered them from Le Chic Bakery Boutique at Crystal's Rose Cottage Chic and they were fabulous. If you don't want to try making them yourself, be sure to contact Crystal, she may have time to make some for you this Easter, they were so darned good, if not use, this recipe below!
I this one found on line at Mom Consuegra (let's give credit where it's due)!
Ingredients:
1/4 lb (1 stick) butter, softened
1 16 oz. package powdered sugar
1 tsp vanilla
1-2 T cream
Chocolate
Directions:
1 Mix together the butter, powdered sugar and vanilla. Mixture will be very stiff. Add in cream and mix well. Turn out onto a surface dusted with additional powdered sugar. Knead until smooth. The longer you knead the smoother the butter cream will be. You can add in well-drained crushed cherries, chopped nuts and maple flavoring instead of vanilla, or shredded, sweetened coconut for variations.
2. Melt chocolate coating in the microwave, stirring until smooth. Roll pieces of butter cream into balls or shape like an egg. Place on a fork and dip into chocolate to coat.
