Yellow crook-neck squash

Zucchini squash

New potatoes

Fresh green beans (optional)

Onion

Olive Oil

Wash newly picked vegetables and peel as necessary.  I like to leave on the peelings unless they are damaged.  Cut off ends of squash and snap off ends of beans.  Heat about 1 to 2 tablespoons of olive oil in a skillet.  Slice onions and add to oil.  Chop potatoes next and add on top of onions.  Let these cook two to three minutes on medium heat, stirring as needed.  Then slice squash and beans (if beans are small, just leave whole) and add on top of potatoes and onions.  Add salt and pepper as desired.  Turn heat down to low and cover pan with lid.  Let cook until vegetables are tender with a little crunch, stirring as needed. 

I didn't put amounts, because you can add in as much or as little of each vegetable to your taste.

This recipe is great for any garden vegetables.  I usually put in whatever I get from the garden:  Tomatoes (red or green), eggplant, peppers, etc.  Just add any extra vegetables in with the squash and beans.  Enjoy!
