Cilantro Salsa and Prawns

Not all of us enjoy cilantro, but personally I love it! It is one of the easiest herbs to plant and can be re-sown several times in our short growing season. It is essential to all Asian cooking and I cannot imagine a curry without it. At PaSu we make this salsa for flavoring prawns on the BBQ.

Cilantro Salsa:

2 generous bunches of cilantro
1/2 cup of roughly chopped green chillies
2-4 oz of fresh ginger chopped
12 plump garlic cloves
zest one lemon
1/2 cup lemon juice
1/2 cup X virgin olive oil
1tbsp Kosher salt
1 heaped tbs of ground peppercorns
1 tbs mustard seed

Put all ingredients in a food processor and pulverize till it is a course paste.Place in a jar and top with olive oil. It can also be frozen in ice cube trays.

Salsa Prawns:

Take 12 large prawns, cut in half and de-vein. Melt 4 tbsp of butter and mix with 3 tbsp of salsa. Place a generous dollop in the prawn, place prawn on BBQ shell side down. Cook until flesh just turns white.About 2-3 minutes. Serve as a starter on a bed of rice.

 Enjoy!
