~ Amuse ~ Pancetta crisps with goat cheese and pear Warm Yukon gold Bilinis with Paddlefish caviar
~ First Course~ Mushroom and leek tartlet baked and served with a small organic greens salad or Quince salad with blue cheese and toasted pine nuts
~ Entrees ~ Wild Atlantic Salmon pan-seared; served with autumn root vegetables, new potato, roasted pasilla, and a sorrel sauce or Beef Short Ribs served on a bed of celery root, Quinoa infused with citrus zests, and Merguez sausage or Duck (saut�ed breast /confit of leg) served with mousseline of potatoes, broccolini, and braised plums tossed with green Cardamon
~ Desserts ~ Chocolate Cake with hazelnut gelato or Panna Cotta with marinated figs in pomegranate syrup and fresh mint.

Vermont co-proprietors, Michael G. and Manuel Mesta, are once again very pleased and honored to feature the exciting culinary creations of the award-winning and extraordinarily talented guest chef, Chef Laurent Quenioux.
Chef Laurent has been a well-respected fixture in the Los Angeles culinary scene for some 25 years. Many of you will remember Laurent from his days as the owner / chef of the beloved 7th St. Bistro and, more recently, Bistro K in Pasadena.
This master chef's specialty is to artfully and ingeniously merge "classic" French dishes with unique and interesting ingredients found at local ethnic markets, treating gourmands to a lavish array of tastes and textures and truly 'cutting edge' cuisine.
