Greetings, and Happy New Year!
Delicious food doesn't need to be complicated. So when people ask me how they should cook chicken, I always say the same thing: buy some bone-in, skin-on chicken thighs and roast them.
Preparation is minimal - pat each piece of chicken dry with a paper towel, lay the chicken pieces on an oiled baking sheet, drizzle with a bit more oil, sprinkle with sea salt, and put the baking sheet in a 400 degree oven. That's it! In an hour, the chicken will be perfectly golden and crispy - and you won't have spent more than five minutes on it.
Below, you'll find a link to this recipe, along with some roasted veggie recipes that go nicely with it.
Enjoy!

P. S. This procedure will also work for other chicken pieces, like breasts and legs (aka drumsticks). Breasts cook more quickly than the thighs - usually in just 35 to 45 minutes - but otherwise the procedure is the same. (Legs take around an hour.)
