"Someone wants to sublet my apartment that I posted on the Off Campus Housing Online site. She claims to live overseas, so she can't meet with me in person. She won't tell me more about who she is, but claims she will mail me a check for larger than the deposit amount; and when it arrives, I am to wire her the check difference. Could this be a scam?"

Recently, there have been several cases of scamming online. These are not uncommon. If you feel uncomfortable working with any individual - or you are ever asked to wire money to a stranger, take caution!
