Recipe from our Chef ~
Try this simple & delectable dish!   

Those who have visited have experienced the amazing and delectable creations by Creacon's superior Chef, Gaetano Pernagallo. Such great care and attention is provided with each meal. We know you'll enjoy this tasty delight! We have just planted peas, rhubarb, lettuce, kale, cabbage, courgettes, and carrots!

 

  

 

Pasta & Cheese Bake    

 

Ingredients; 

Penne Pasta 400g (15 oz)

 

Sauce:

Our Vegetable Garden

2 garlic cloves minced

1 onion chopped

200g (8oz) mince beef, or veg/soy alternative 

5 Tomatoes, grind and separate from seed & skin

2 tbsp tomatoe sauce

1 tsp salt

1/4 tsp black pepper

100 ml water

1 tsp oregano

5 leaves fresh basil

1 tbsp olive oil

 

Cheese sauce:

1/4 tsp salt

300g ricotta cheese (10.5 oz)

1/2 tsp nutmeg

1 egg

2 tbsp parsley

 

Spread:

100g mozzarella cheese (3.5 oz)

200g parmesan cheese (7oz) 

 
Method;   

Penne: Boil 5,000 ml water, salt. Cook pasta until al dente. Saute onion and garlic in oil. Add mince meat. Cook until it's done. Add chopped tomato, tomato sauce, salt, black pepper. Stir and cook until it's thick. Add oregano, basil and penne. Stir well. Put penne in a baking pan. Cheese Sauce: Put the ricotta cheese in a bowl, add the fresh grated nutmeg. Add the egg and the parsley. Mix these ingredients together with a spoon. Spread the sauce on top the penne and add mozzarella cheese and parmesan. Bake in preheated oven at 350 F (177 C) for 35 minutes. Remove from the oven and sprinkle the remaining parmesan cheese. Allow to cool for approximately 15 minutes.

Chef's Tip:

When you're frying red onion on a frying pan, to keep the vibrant red color, squeeze in a few drops of lemon juice!
