Nourish Your Soul
Our Gardens to our Kitchen...
With each newsletter, we include our 'Nourish Your Soul' section as a way to share wonderful insights from the fruits, vegetables, and herbs of the gardens.
From Lavender and Rosemary to many varieties of Luscious Lettuce, Beans, Beets, and so much more, we have tilled, planted, and share a wondrous collection of Vegetables, Herbs and Fruits grown right here in our very own gardens at Creacon. We've included some recent photos of our crop. Enjoy!
Recipe from our Chef!
Those who have visited have experienced the amazing and delectable creations by Creacon's superior Chef, Gaetano Pernagallo. Such great care and attention is provided with each meal. We know you'll enjoy this tasty delight!
Ricotta Mushroom & Spinach
Tortellini
Ingredients;
2 tablespoons butter
1 small onion chopped
250 g fresh cream (heavy cream)
100 g grated parmesan cheese
150 g fresh mushrooms, sliced
about 10 or more cherry tomatoes, halved
250 g ricotta and spinach tortellini
250 mg cream cheese
250 g of fresh, chopped spinach, thawed and drained
(or can use 125 mg of each fresh cream and cream cheese)
Method:
Cook the tortellini for 3-4 minutes, or per package instructions.
Heat the butter in a large skillet over medium heat.
Stir in the onion and cook until soft and translucent.
Mix in the cream cheese, and/or heavy cream, parmesan, mushrooms, and spinach.
Gently mix in tortellini and cherry tomatoes, warm thoroughly.
Sprinkle with Love and serve. Enjoy!
