Nourish Your Soul
Our Gardens to our Kitchen...
With each newsletter, we include our 'Nourish Your Soul' section as a way to share wonderful insights from the fruits, vegetables, and herbs of the gardens.
From Lavender and Rosemary to many varieties of Luscious Lettuce, Beans, Beets, and so much more, we have tilled, planted, and share a wondrous collection of Vegetables, Herbs and Fruits grown right here in our very own gardens at Creacon. We've included some recent photos of our crop. Enjoy!
Recipe from our Chef!
Those who have visited have experienced the amazing and delectable creations by Creacon's superior Chef, Gaetano Pernagallo. Such great care and attention is provided with each meal. We know you'll enjoy this tasty delight!
Chicken and Sun-Dried Tomato Bruschetta
2 skinless, boneless chicken breast halves
295 ml Italian salad dressing, divided
120 g fresh spinach, torn
85 g crumbled feta cheese
8 sun-dried tomatoes, packed without oil, chopped
1 (1 pound) loaf focaccia bread, cut into 1/2-inch
thick slices
60 ml olive oil
 Method:
Place the chicken and 1 cup salad dressing in a bowl. Cover, and marinate at least 3 hours in the refrigerator.
Preheat the grill for high heat.
Lightly oil the grill grate. Discard dressin g used for marinating, and grill chicken 7 minutes per side, or until juices run clear. Cool and shred.
In a large bowl, mix the cooked chicken, spinach, feta cheese, sun-dried tomatoes, and remaining dressing. Brush the focaccia bread with olive oil, and cook 1 minute per side on the prepared grill, or until lightly toasted. Place portions of the chicken mixture on the toasted focaccia to serve. For a Vegetarian Option, do not use chicken or replace with a soy substitute. Be creative and add any toppings you'd like!
Sprinkle with Love and serve as a snack or with a meal. Enjoy!
