Greetings!
There are no two ways about it...Pancakes make people happy! And in Olney, England they bring a special joy. Shrove Tuesday (the day before lent begins) is celebrated
in Olney England like nowhere else on earth! Townsfolk gather to see
the original and unique Olney Pancake Race which is now world famous.
Traffic stops while the competitors make their 415 yard dash from the
Bull Hotel to the Parish
Church of St.Peter & St. Paul. Traditional declares that
the race was first run in the year 1445 and the whole day was given over to a
festival of celebrations, pranks and pastimes, which formed a part of
the last fling celebrations. I don't know what part pankcakes play in New Orleans on Fat Tuesday but at the Foley House Inn they make people smile. |
Lemon
Ricotta Cheese Pancakes With Strawberry Sauce
3/4
cup flour
1 tsp.
baking powder
1/2
tsp. salt
3 tbsp.
sugar
2
eggs
1/3
cup milk
1/3
cup canola oil
1 cup
ricotta cheese
Juice
and zest of 1 lemon
Combine
dry ingredients. In a separate bowl combine the wet ingredients, and then
mix with the dry ingredients. Add lemon juice and zest. Pour
approximately 1/4 cup of batter on grill or skillet (400 degrees). Cook until
golden brown. Flip once. Arrange on a plate and dust with
confectioner's sugar.
Strawberry Sauce
1 pt. Strawberry, hulled
1/2 cup Granulated sugar
2 tbsp. Lemon juice
In blender or food processor, process all ingredients until
smooth. Refrigerate sauce until ready to use. Makes about 1 and 2/3 cups.
