Greetings!

This month we feature Quita's wonderful Coconut Streusel Coffee Cake. It's a favorite here at the Foley and one of our most requested recipes. Also, a room with a (GREAT) view, the best of Broadway and a mid-week deal.
Coconut  Streusel Coffee Cake

Coffee Cake

1 1\2 cups all-purpose flour
3\4 cup granulated sugar
3\4 teaspoon baking powder
1\4 baking soda
1\2 teaspoon salt
1\2 cup firm butter cut into pieces
2\3 cup buttermilk
1 egg
1-teaspoon vanilla

Streusel

1\4 cup all-purpose flour
1\4 cup brown sugar
2 tablespoons butter softened
1\3 cup flake coconut
1\4 cup chopped pecans

Heat oven to 350 degrees. Grease bottom only of 8-inch square pan with shortening or spray bottom with cooking spray. In large bowl, stir 11\2 cups flour, the granulated sugar, baking powder, baking soda and salt until mixed. Cut in 1\2 cup butter, using pastry blender until mixture is crumbly. Add buttermilk, eggs and vanilla. Beat with electric mixer on medium speed 1 minute. Spread in pan. In small bowl, mix all streusel ingredients except coconut and pecans with fork until mixture is crumbly. Stir in coconut and pecans. Sprinkle over batter. Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. Serve warm.
