Greetings!

Banana plants are often mistaken for trees because of their height (10 - 25 feet). Both skin and the inner part can be eaten raw or cooked. Western cultures generally eat the inside raw and throw away the skin while some Asian cultures eat both the inside and outside cooked. Bananas are grown in over 107 countries throughout the tropics although India is the largest producer of bananas accounting for almost 17 million metric tons annually.

Bananas make people happy whether you are slipping on the peel, making a bunch into a hat or using them as we do at the Foley House Inn...
Bananas Muffins
with Streusel Topping
Bananas Muffins with Streusel Topping

2 mashed ripe bananas
1/2 cup vegetable oil

2 large eggs
1 cup of sugar
1 cup of flour
1 cup chopped pecan
1 teaspoon baking powder
1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon


Heat oven to 350. Grease medium muffin pan.
 
Beat bananas, oil, eggs and sugar in large mixing bowl until. In separate bowl mix all dry ingredients. Mix together all ingredients just until blended.
Scoop 1/4 cup of batter evenly among muffin cups. Bake about 15 minutes or until golden brown. Let muffins cool off in the pan for about 2 to 3 minutes before taking out.

*Streusel Topping*
 
2 tablespoons firm stick margarine or butter
1/4 cup all-purpose flour

2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon

 
Cut margarine into flour, brown sugar and cinnamon in medium bowl, Using pastry blender until crumbly. Sprinkle 1/2 teaspoon on top of each muffin. Place in oven and bake 15 minutes or until golden brown.
