Greetings!
This month we feature Quita's Almond Florentines. They are very thin cookies that are almost a confection, made with dried fruits,
nuts, butter and sugar. The underside of the cookie can be covered
with chocolate.
When you hear the name 'Florentine', you instantly think it must be from
Florence Italy. Unfortunately, history does not tell us its true origin.
What we do know is that it is popular in Europe and that there are
different forms of this sweet confection. This
confection is especially popular during the holiday season but no matter when Quita serves them at the Foley House Inn, it's always a time to celebrate. |
Quita's Almond Florentines
*1 cup
sugar *2 1/2
cups chopped Almonds *1/4 cup
butter (melted) *5 tablespoons
flour *2 egg
whites (slightly beaten) *dash
salt *1/2 teaspoon
vanilla
Toss sugar and almonds
together in a bowl. Stir in butter. Next stir in flour, egg whites, salt and
vanilla until well blended
Drop teaspoon full of cookie
batter onto a greased cookie sheet and use damp fingers to
flatten.
Bake at 350 degrees for 10
minutes. Makes about 3 dozen
